This strawberry poke cake is my mom’s favorite, so I knew I had to get it down on paper… well, the internet, actually. With only five ingredients, one of which is boiling water every busy mom needs this dessert in their life.
Combine strawberries, Jell-o and cake mix and you’ve got a strawberry shortcake like cake on your table lickety split.
Strawberry Poke Cake Recipe
Spoiler alert: If you’ve found this recipe googling how to make a poke cake but aren’t sure which flavor you want to use, the strawberry can be switched out to make any flavor.
This Jello poke cake recipe can be a blueberry poke cake, an orange poke cake or truly any other flavor. You’d simply swap out the flavor of Jello and the strawberries on top to make it a different flavor.
However … I’m just going to give you a heads up – this is literally the best. You could definitely use homemade whipped cream on top if you wanted, but I keep things easy street.

What is Strawberry Poke Cake?
Strawberry poke cake is cakey, and fruity and moist and decadent with the Cool Whip topping. And, because it is so easy it’s a dessert that can be thrown together in such a short amount of time. And, I love that it can be made ahead too.
My Recipe for Jello Poke Cake:
Grab all of your ingredients:
- 1 16.25 ounce box white cake mix (+ eggs, oil, etc. called for on the box)
- 1 6 ounce package strawberry Jell-O
- 2 cups boiling water
- 1 16 ounce container frozen whipped topping, thawed
- 1 pint fresh strawberries sliced
Can that really be it?? Yes!

How to Make Strawberry Poke Cake:
First you’ll prepare and bake the cake based on the directions on the box. I love using the white cake mix for this poke hole cake because the strawberry jello mix going down into white cake is so pretty – you really could use any cake that you cared to use, though.
When the cake has had a chance to cool down just a little bit (3-5 minutes) take a fork or the handle end of a wooden spoon and poke holes in the cake all over. As you can see from the picture, the jello mixture will seep down into the holes that you poke into the cake.
In a two cup or larger glass cup combine the boiling water and the jello mix until it’s combined.
Pour the liquid Jello mix over the cake allowing the liquid to soak into all of the holes.
Put the cake in the refrigerator for atleast 3-4 hours or overnight.
Top with whipped topping and and lastly, garnish with fresh strawberries. Yum!
You can store the cake in the refrigerator until ready to serve.

Ingredients
- 16.25 ounce box white cake mix (+ eggs, oil, etc. called for on the box)
- 6 ounce package strawberry Jell-O
- 2 cups boiling water
- 16 ounce container whipped topping thawed
- 1 pint fresh strawberries
Instructions
- Cook cake mix according to directions on box
- Poke holes in cake
- Mix water and Jell-o
- Pour Jell-o mixture over cake
- Put in fridge for 3-4 hours
- Top with whipped topping and cut strawberries
- Enjoy!
