Instant Pot Shredded Chicken Tacos

Making Instant Pot shredded chicken tacos recipe is not too spicy, not too sweet, just simply perfect for tacos and other Mexican food favorites. Use this meat for shredded chicken tacos, chicken quesadillas, chicken nachos, taco salads and more!

Ingredients

  • 1-3 pounds chicken breasts
  • 1-3 cans Rotel tomatoes ** I use one can of rotel per pound of chicken
  • 1 cup warmed up chicken broth
  • Put all ingredients in 6- Qt. Instant Pot

Instructions

  • Put all ingredients in 6- Qt. Instant Pot
  • Set to high pressure for 12 minutes
  • Seal Instant Pot and walk away
  • When Instant Pot is finished, quick release or natural release for a more tender shredded chicken
  • Remove inside pot from Instant Pot and use hand mixer to shred chicken
  • Serve with tortillas, shredded lettuce, shredded cheese, salsa and all the fixins'!
