Preheat a large griddle or pan
Beat eggs in a separate bowl
Add oil to pan and cover pan surface with oil to prevent food from sticking to the pan
Pour eggs into the griddle
Let eggs cook without scrambling, move pan to let middle run out and cook on pan surface, flip over like an omelet on the side to not be bothered
Add peas, carrots and onions to griddle
Add shrimp to griddle
Stir fry shrimp and veggies for a minute, until shrimp is beginning to turn pink, but careful not to overcook the shrimp
Break up the eggs, remove any parts that have overcooked on the pan
Add rice to mixture
Combine rice, veggies, eggs and shrimp
Add salt, sugar and sauces to the shrimp fried rice and stir
