Zuppa Toscana Keto Soup

Doing a Keto friendly diet is not terribly hard, except for when you're craving low carb soups, right? Off to the kitchen I went to make a Copycat Olive Garden Zuppa Toscana soup. This Keto approved soup is full of flavor and filling, too.

Ingredients

1 pound Italian sausage

    1 tsp onion powder

      3 cloves minced garlic

        1/4 tsp black pepper

          1/2 tsp salt

            1 head cauliflower, chopped (or 1 bag steamed cauliflower florets) - these replace the potatoes

              6 cups water

                3 tsp chicken bouillon (or more to taste)

                  3 cups kale, chopped

                    1 1/2 cups heavy whipping cream

                    • Optional: add cooked bacon I don't and it's amazing

                    Instructions

                    • Brown Italian sausage in pot or dutch oven
                    • Add garlic and onion powder to sausage, cook for a few minutes
                    • Add salt and pepper
                    • Reduce heat to medium and add cauliflower, bouillon and water
                    • Cook over medium heat, at a slow simmer for about 20-25 minutes time (more if you didn't steam the cauliflower)
                    • Reduce heat to low, add kale, and simmer another 10 minutes or so.
                    • Add heavy cream.

                    Notes

                    • You can use chicken broth or chicken bone broth instead of water, I prefer to use water and season with chicken bouillon as needed.
                    • Want more of a kick? Add red pepper flakes when you add garlic
                    • Top with parmesan cheese to make this soup recipe a little fancier
