Doing a Keto friendly diet is not terribly hard, except for when you're craving low carb soups, right? Off to the kitchen I went to make a Copycat Olive Garden Zuppa Toscana soup. This Keto approved soup is full of flavor and filling, too.

Ingredients
1 pound Italian sausage
1 tsp onion powder
3 cloves minced garlic
1/4 tsp black pepper
1/2 tsp salt
1 head cauliflower, chopped (or 1 bag steamed cauliflower florets) - these replace the potatoes
6 cups water
3 tsp chicken bouillon (or more to taste)
3 cups kale, chopped
1 1/2 cups heavy whipping cream
Optional: add cooked baconI don't and it's amazing
Instructions
Brown Italian sausage in pot or dutch oven
Add garlic and onion powder to sausage, cook for a few minutes
Add salt and pepper
Reduce heat to medium and add cauliflower, bouillon and water
Cook over medium heat, at a slow simmer for about 20-25 minutes time (more if you didn't steam the cauliflower)
Reduce heat to low, add kale, and simmer another 10 minutes or so.
Add heavy cream.
Notes
You can use chicken broth or chicken bone broth instead of water, I prefer to use water and season with chicken bouillon as needed.
Want more of a kick? Add red pepper flakes when you add garlic
Top with parmesan cheese to make this soup recipe a little fancier
