Ingredients

  • 1 French baguette thinly sliced and toasted
  • 3 fresh peaches
  • 16 oz ricotta cheese
  • 4 T honey
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Toast the baguette slices until golden brown
  • Halve, pit, and slice the peaches
  • Spread ricotta cheese on each toast slice
  • Top with peach slices
  • Drizzle with honey and season with salt and black pepper
  • Garnish with mint and basil
  • Serve immediately

Notes

Notes: To toast the bread slices, lay them out on a baking sheet in a single layer. Brush with olive oil or melted butter. Bake in the oven or grill for 15 minutes. 
If you would rather have a whipped ricotta that's not chunky and is a lighter feeling cheese, you can easily do that instead!
While regular ricotta is a soft, grainy cheese with a slightly gritty texture, whipped ricotta is made by blending regular ricotta in a bowl or food processor with a very small amount of cream or milk until it becomes smooth and airy (adding more as needed). Whipped ricotta has a lighter, fluffier texture and a milder flavor compared to regular ricotta.
