It’s a Summer Vibe Alert: Peach Bruschetta Topped with Honey & Ricotta
Peaches scream summer and I am here for it!
Recently I decided that we needed more peaches in our life and the delicious fruit shouldn’t just be used for flavoring drinks.
I set out to make a family favorite and whoop it up more by adding basil and honey.
Whoa! The flavors that this summer appetizer brings to your tastebuds are crazy delicious.
I mean, you will see that when you combine these ingredients, you can’t go wrong!
The wonderful thing about this recipe is that the ingredients are all pretty simple and there’s not much to fuss over as far as prep goes (those are my favorite recipes, as you know if you’ve been around MomsCravings.com for any length of time!)
This recipe became a go-to not only when we had friends stop in, but also a quick snack to put out while I’m making dinner, but don’t want my family members digging into a bowl of ice cream the size of their heads – which is what would happen if I don’t have an easy option or two.
It’s just the way things go around here: Easy food wins and hungry people are everywhere all of the time.
And, my personal summer mantra:
The Top Five Things an Easy Summer Appetizer Must Entail:

Now, to get to this delicious recipe that tops my list of easy party starters and summer appetizers!

Notes: To toast the bread slices, lay them out on a baking sheet in a single layer. Brush with olive oil or melted butter. Bake in the oven or grill for 15 minutes. If you would rather have a whipped ricotta that’s not chunky and is a lighter feeling cheese, you can easily do that instead!
While regular ricotta is a soft, grainy cheese with a slightly gritty texture, whipped ricotta is made by blending regular ricotta in a bowl or food processor with a very small amount of cream or milk until it becomes smooth and airy (adding more as needed). Whipped ricotta has a lighter, fluffier texture and a milder flavor compared to regular ricotta.
