Chocolate Eclair Cake

When you need an easy recipe, it’s hard not to just reach for a box mix. Box mixes are great every once in awhile, but I find it’s fun to assemble something, too. Something that is homemade and the flavors can still blend together.

This no bake chocolate eclair cake is always our go-to and I love that it’s a simple enough dessert that our daughter can help, too.

With just five steps, and 24 hours in the fridge, you’re done and on your way!

Crock Pot desserts are fun, too!

Want something a little more labor-intensive but just as delicious? This cookie dough dessert is really good, too.

Gather your ingredients to start this eclair no bake cake:

  • 1 package graham crackers
  • 2 packages 3.4 oz instant French Vanilla pudding mix
  • 8 ounces Cool Whip, thawed
  • 3 cups milk
  • 16 ounces chocolate frosting

Eclair Cake No Bake Directions:

In a large bowl, mix together the pudding mix, and milk. Beat well until pudding is a thicker consistency

Fold in the thawed Cool Whip

Spray a 9×13 dish with cooking spray

Lay one layer of graham crackers. Break graham crackers to fit

Layer half the pudding mixture

Lay another layer of graham crackers

Layer remaining pudding mixture

Lay the last layer of graham crackers

Remove lid and heat frosting in the microwave for 30 seconds

Pour and spread frosting on the last layer of graham crackers

Cover and let sit for 24 hours
