25 Easy Chicken Dinners My Family Begs Me to Make Every Week

Some nights, I just stand in front of the open fridge wondering what on earth to make for dinner. Anyone else?

It’s like every meal idea I’ve ever had has just left my brain at the same time. So I started keeping a running list of the chicken dinners my family actually gets excited about, and now it lives in my phone for emergencies.

These are the recipes that get scraped clean. The ones the kids ask for again the next week.

The ones I make on autopilot because I’ve made them so many times I could do it half asleep (and sometimes I am). Here are 25 easy chicken dinners my family begs me to put on the menu, organized by how much effort you want to put in tonight.

IngredientsCooking Instructions

Ingredients

  • 5 cups shredded rotisserie chicken
  • 2 cups chicken broth
  • 1 cup water
  • 1 packet buttermilk ranch dry seasoning
  • 3 cups penne pasta, uncooked
  • 1 1/2 cups mild cheddar cheese
  • 1 cup bacon pieces
  • 1 can cream of chicken soup
  • 8 ounces Velveeta, cubed

Cooking Instructions

  1. Pull the meat off a rotisserie chicken and shred it. You want about 5 cups.
  2. In a 4 quart crock pot, combine the chicken, cream of chicken soup, broth, water, ranch packet and Velveeta cubes. Cover and cook on high for 3 hours.
  3. Stir in the dry penne, push it under the liquid, and cover for 20 minutes.
  4. Stir well and cover for 10 more minutes, until the pasta is tender.
  5. Stir again, scatter the cheddar over the top and the bacon over the cheddar, and cover for 5 minutes until the cheese melts. Scoop into bowls.
Notes: Dry pasta goes in at the end only. Three hours in the sauce turns it to paste. Thirty minutes on high cooks it through.

This one has a cult following in my house. Creamy, ranchy, cheesy, with all that tender chicken on top of pasta. The first time I made it, my husband took the leftovers to work the next day in a Tupperware and texted me from his desk about it. So.

I throw the chicken in frozen most weeks and just let the crockpot do its thing while I’m off doing literally anything else. No thawing, no stress, no plan required. This one also doubles easily if you know you’ll want leftovers, and it reheats with a splash of milk stirred in so it stays creamy instead of gluey. Did you know you can make pasta in the slow cooker?

Ingredients

  • 4 boneless, skinless chicken breasts
  • 18 ounce bottle barbecue sauce
  • 1/4 cup zesty Italian salad dressing
  • 1/4 cup brown sugar
  • 1 tablespoon Worcestershire sauce
  • 8 sandwich buns

Cooking Instructions

  1. Lay the chicken breasts in the slow cooker in a single layer.
  2. Stir the barbecue sauce, Italian dressing, brown sugar and Worcestershire together in a measuring cup. Spoon it over the chicken.
  3. Cover and cook on low for 6 hours or on high for 3.
  4. Shred the chicken with two forks right in the sauce, stir, and let it sit 15 minutes with the lid off before piling it onto buns.
Notes: The Italian dressing is the secret. Its vinegar and herbs cut through the sweet sauce, and the recipe tastes flat without it.

Two ingredients. That’s it. Chicken and barbecue sauce, in the crockpot, walk away. By dinner you have the most tender, saucy pulled chicken that goes on buns, in tacos, on top of baked potatoes.

I love a recipe that does this much heavy lifting for me. This is one of those dinners where you can just use whatever barbecue sauce is already in your fridge door, no need for anything fancy. It freezes beautifully too, so I’ll often make a double batch and tuck half away flat in a bag in the deep freezer for a night when cooking feels impossible. Six ingredients, and five of them probably live in your kitchen already.

Ingredients

  • 2 to 6 chicken breasts
  • 1 can Rotel, undrained
  • 1/8 cup taco seasoning, about one packet
  • Tortillas, cheese, lettuce, sour cream and fixings

Cooking Instructions

  1. Lay the chicken in the bottom of a 4 quart or larger crock pot.
  2. Pour the can of Rotel over the chicken.
  3. Sprinkle on the taco seasoning.
  4. Cover and cook on high 3 to 4 hours or low 6 to 8 hours. Check the chicken with a meat thermometer.
  5. Shred with two forks, or move the chicken to a bowl and use a hand mixer.
  6. Serve in tortillas with all the fixings.
Notes: For crispy carnitas style chicken, spread the shredded meat on a foil lined sheet pan and broil in 5 minute rounds, watching it closely.

Taco Tuesday, but make it lazy. The chicken just shreds itself by the end and tastes like it took way more work than it did. I always set out a little toppings bar with cheese and salsa and sour cream and let everyone build their own. This is the easiest way I know to feed picky eaters without a fight, since everyone gets to pick their own toppings and nobody has to touch anything they don’t like.

Leftover chicken makes great quesadillas or a quick taco salad the next day, so I usually make more than we need on purpose. Three ingredients and a crock pot is the easiest taco night there is. The chicken goes in before work and gets shredded at dinner. The Rotel goes in with its juice.

IngredientsCooking Instructions

Ingredients

  • 6 boneless skinless chicken thighs
  • 2 packets zesty Italian dressing mix, 1 ounce each
  • 32 ounces chicken broth
  • 2 packages cream cheese, 8 ounces each
  • 16 ounces medium egg noodles, boiled 3 minutes only
  • Salt and pepper to taste

Cooking Instructions

  1. Put the chicken thighs in a 6 to 8 quart crock pot, sprinkle the dressing mix over them, and pour in the broth.
  2. Cover and cook on low 6 to 8 hours.
  3. Move the chicken to a plate and shred it with two forks.
  4. Drop the cream cheese into the broth in the crock, put the lid on, and let it sit 10 minutes.
  5. Whisk the cream cheese and broth into a thin sauce. It will look runny.
  6. Add the par boiled noodles and the shredded chicken.
  7. Leave the lid off and stir until the pasta is coated and the sauce thickens to the consistency you want, about 30 minutes.
Notes: Three minutes in boiling water is all the noodles get. They finish in the crock, and fully cooked noodles turn to mush.

Creamy, garlicky chicken Alfredo, but the slow cooker does most of the work. It tastes like the kind of pasta you’d get at a really cozy Italian place. The kids eat it without complaining, which is, you know. The dream.

I like to cook the noodles separately and stir them in right before serving so nothing gets mushy if dinner gets delayed by bath time chaos. A little extra parmesan on top never hurts, and the sauce reheats fine the next day with a splash of milk to loosen it back up. To say this is a hit in our house would be an understatement. The neighborhood kids go nuts when they hear it is alfredo night.

Ingredients

  • 3 to 5 pounds chicken breasts or thighs
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Cooking Instructions

  1. Season the chicken and lay it in the bottom of the crock pot. Pour in the broth.
  2. Cook on low 6 to 8 hours or high 3 to 4 hours.
  3. Move the chicken to a bowl and shred it with two forks or a hand mixer on low.
  4. Use it right away, or cool and portion into zip top bags and freeze up to two months.
Notes: Three to five pounds makes 6 to 8 cups of shredded chicken. Two cup bags are what most casseroles and soups call for.

This isn’t even really a recipe, it’s more of a strategy. Make a big batch of shredded chicken at the start of the week and you have, like, four dinners ready to go. Tacos, salads, soups, sandwiches. It’s basically meal prep without the meal prep energy.

I portion the extra chicken into the good Tupperware and stack it in the fridge so it is just sitting there waiting for me on the nights I have nothing planned. It also freezes really well in flat bags, so you can pull one out straight from the deep freezer and thaw it in the fridge overnight. This is not a dinner. It is the thing that makes four other dinners fast.

Ingredients

  • 4 to 5 pound broiler chicken
  • 2 tablespoons paprika
  • 2 tablespoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 to 4 teaspoons water

Cooking Instructions

  1. Put the whole chicken breast side down in a 6 quart or bigger slow cooker.
  2. Stir the paprika, garlic powder, onion powder, salt, pepper and water into a paste.
  3. Rub the paste over the outside of the chicken and as much of the inside as you can reach.
  4. Cover and cook on low 7 to 8 hours or high 4 to 4 1/2 hours, until a thermometer in the thickest part reads 180.
  5. Move the chicken to a platter and rest a few minutes before carving.
Notes: For crisp skin, move the cooked chicken to a foil lined sheet pan and put it under the broiler a few minutes.

I was honestly nervous to try a whole chicken in the crockpot the first time. It feels like a big move. But it falls right off the bone and tastes like a rotisserie chicken from the grocery store, except cheaper and you didn’t have to leave the house. Once it’s done, I pull all the meat off and use it exactly like a store bought rotisserie chicken all week long, in sandwiches, soups, whatever needs it.

Don’t skip saving the bones and drippings either, they make a really solid start for homemade broth if you’re feeling ambitious. Our son takes on chicken legs like it is his job, so a whole chicken is the easiest way to make him happy. This one cooks while we are gone all day. Breast side down is on purpose.

Ingredients

  • 2 to 3 pounds chicken thighs
  • Salt
  • Pepper
  • Garlic powder
  • 1 cup chicken broth

Cooking Instructions

  1. Season the thighs with salt, pepper and garlic powder.
  2. Set the trivet in the Instant Pot and pour in the broth.
  3. Lay the thighs on the trivet.
  4. Lock the lid, seal it, and cook on manual high pressure 13 minutes.
  5. Quick release the pressure.
  6. Shred with two forks or a hand mixer.
  7. Use within three days, or freeze in airtight bags.
Notes: A hand mixer on low shreds the whole batch in about thirty seconds, and the shreds come out more even than forks.

Chicken thighs in the Instant Pot are juicy in a way that almost feels illegal. Like, how is it this tender? I love serving these over rice with some kind of sauce going on. They’re forgiving, too, which I appreciate on a chaotic Tuesday.

Thighs are also just a cheap swap for breasts if that’s what you have on hand, and they hold up better to the pressure cooker without drying out. This is a great one to double since the Instant Pot cook time barely changes, and extra thighs mean lunch is already handled tomorrow. Shredded chicken thighs are in soups, salads and tacos at our house every week. This is the method that never fails me.

IngredientsCooking Instructions

Ingredients

  • 2 pounds boneless skinless chicken strips
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1/2 white onion, sliced into half rounds
  • 1 teaspoon cayenne pepper
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 12 tortillas
  • 1 to 2 limes
  • Fajita toppings

Cooking Instructions

  1. Put the chicken in the Instant Pot, add the peppers and onion, and toss.
  2. Mix the cayenne, cumin, paprika, chili powder, garlic, salt and pepper. Sprinkle half over the chicken and toss again.
  3. Lock the lid and cook on high pressure 15 minutes.
  4. Quick release the pressure, or cook 10 minutes and let it release naturally for more tender chicken.
  5. Drain off most of the juice, then sprinkle on the other half of the spices.
  6. Pile onto tortillas with cheese, onion and a squeeze of lime.
Notes: The pot makes a lot of juice. Pour most of it off before the second round of spices or the fajitas are soupy.

I think fajita night is one of the most fun dinners. Everyone stands around making their own little wraps, the peppers smell so good, the chicken is perfectly seasoned. The Instant Pot just makes it so much faster than the stovetop version. I like to slice the peppers and onions ahead of time and keep them in the fridge so this comes together even quicker on a busy night.

Leftovers make a great fajita bowl over rice the next day if you’re not up for reheating tortillas. Check the ingredient list. You probably have everything but the peppers in the pantry right now, which is how this became a weeknight regular. The spices go on in two halves.

IngredientsCooking Instructions

Ingredients

  • 1/4 cup coconut flour
  • 1 1/2 tablespoons Italian seasoning
  • 1 teaspoon garlic powder
  • 2 pounds boneless skinless chicken breasts, pounded 1/4 inch thick
  • 2 to 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons unsalted butter
  • 8 ounces baby portobello mushrooms, sliced
  • 1/2 medium red onion, chopped
  • 3/4 cup sweet Marsala wine
  • 3/4 cup chicken broth
  • 1/4 cup heavy cream
  • 4 ounces cream cheese, room temperature, in chunks
  • 1/4 cup fresh parsley, chopped

Cooking Instructions

  1. Mix the coconut flour, Italian seasoning and garlic powder. Put the chicken in a gallon bag, pour in the flour mix, and turn until coated.
  2. Set the Instant Pot to saute on high with a tablespoon of oil. Brown the chicken in batches about 3 minutes per side, adding oil as needed, and set it aside.
  3. Add the butter, mushrooms and onion and cook, stirring, 5 to 6 minutes until the mushrooms brown.
  4. Pour in the Marsala and broth and scrape up the browned bits from the bottom.
  5. Turn the pot off, return the chicken, lock the lid, and cook on manual high 10 minutes. Natural release 10 minutes, then quick release.
  6. Move the chicken to a platter and rest 5 minutes.
  7. Stir 2 tablespoons of the hot liquid into the cream to temper it, then add the cream, cream cheese and parsley to the pot and stir into a sauce. Season and spoon over the chicken.
Notes: Scrape the bottom of the pot clean when the wine goes in. Any stuck bits left behind trigger the burn warning.

This is the recipe I make when I want dinner to feel like a little event. Mushrooms, that wine sauce, tender chicken. It tastes like a really nice restaurant entrée. I usually serve it over mashed potatoes because the sauce is just too good to waste.

This is one I actually make ahead when we have company coming, since the sauce only gets better after it sits for a bit. If mushrooms aren’t your family’s thing, you can leave them out and it still tastes plenty rich. Instant Pot dinners are not usually pretty. This one is.

Ingredients

  • 1 to 3 pounds chicken breasts
  • 1 can Rotel tomatoes per pound of chicken
  • 1 cup warm chicken broth
  • Tortillas, lettuce, cheese and salsa for serving

Cooking Instructions

  1. Put the chicken, Rotel and broth in a 6 quart Instant Pot.
  2. Lock the lid and cook on high pressure 12 minutes.
  3. Quick release, or let it release naturally for more tender chicken.
  4. Lift the inner pot out and shred the chicken right in it with a hand mixer.
  5. Serve in tortillas with lettuce, cheese, salsa and all the fixings.
Notes: One can of Rotel per pound of chicken is the ratio. Scale up to three pounds and three cans without changing the time.

For the nights when you want tacos but you also forgot to thaw anything. Twenty minutes in the Instant Pot from frozen, and you have shredded taco chicken ready to go. I’m telling you, this saves me at least once a month. This is my go to answer for what to make when I completely forgot to plan dinner, since it goes straight from freezer to pot with zero prep.

Any extra shredded chicken keeps in the fridge for a few days and reheats fine with a splash of the cooking liquid. Shredded chicken tacos have become a weekly thing here. Tacos one night, quesadillas or taco salad the next, and the Instant Pot does all of it. Three ingredients.

IngredientsCooking Instructions

Ingredients

  • 1 pound bacon, diced raw
  • 4 chicken breasts, or 2 large cut in half
  • 1/2 cup chicken broth
  • 1 packet Hidden Valley buttermilk ranch dressing mix
  • 8 ounces cream cheese
  • 1/2 cup mayonnaise, more or less to taste
  • 2 cups shredded cheddar cheese
  • Chopped green onions, about 3 stems
  • Buns for serving

Cooking Instructions

  1. Set the Instant Pot to saute on high. When it reads hot, cook the diced bacon until done, then move it to a plate and drain the grease from the pot.
  2. Put the chicken and cream cheese in the pot, pour the broth over, and sprinkle on the ranch mix.
  3. Lock the lid and cook on manual high pressure 15 minutes.
  4. Natural release 5 minutes, then quick release.
  5. Move the chicken to a bowl and shred it with a hand mixer.
  6. Set the pot back to saute and whisk the cream cheese into the broth until smooth.
  7. Return the chicken, add the mayo, and stir until combined.
  8. Top with the cheddar, bacon and green onions and serve on buns.
Notes: The name comes from the fact that nobody can stop eating it. Serve it on the best buns you can find, or over rice for a dinner plate.

Same beloved crack chicken vibe, but in 20 minutes instead of all day. Creamy, ranchy, with bacon, because of course. We pile it onto buns or eat it over rice. It is just so good and so fast and I am not above making it twice in one week.

If you’re short on time, precooked bacon crumbles work in a pinch and nobody at my table has ever noticed the difference. This reheats really well the next day, so it’s a good one to make on Sunday and coast on for a lunch or two. There are days when dinner has not crossed my mind by noon and grilled cheese again is not an option. This is what I make on those days.

IngredientsCooking Instructions

Ingredients

  • 16 ounces thin spaghetti, cooked al dente
  • 1/2 cup butter, plus more for the pan
  • 4 cups cooked shredded chicken
  • 2 cans cream of chicken soup
  • 2 cups sour cream
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons parmesan cheese
  • 2 cups shredded mozzarella
  • 1/2 to 1 cup Panko bread crumbs

Cooking Instructions

  1. Heat the oven to 350 and butter a 9×13 dish.
  2. Stir the butter, chicken, soup, sour cream, salt, pepper, parmesan and milk together, then add the cooked spaghetti.
  3. Pour into the dish and cover with the mozzarella.
  4. Bake 30 minutes.
  5. Scatter the Panko over the top and bake 10 minutes more.
Notes: This can be assembled up to two days ahead and kept covered in the fridge. Add 10 to 20 minutes to the bake time if it goes in cold.

Creamy chicken pasta baked under a layer of cheese until it’s all golden and bubbly. The whole table goes quiet for the first few bites, which is honestly the highest compliment a dinner can get in my house. This is a great make ahead casserole, you can assemble it the night before, keep it covered in the fridge, and just bake it when you’re ready. It’s also the perfect vehicle for leftover rotisserie chicken if you happen to have some sitting around.

This is the pan I show up with when someone has a newborn and no free hands. It reheats well and every kid at the table eats it. Thin spaghetti cooked just al dente is the right noodle. It bakes another forty minutes in the sauce, so soft noodles going in come out mushy.

Ingredients

  • 16 ounce package spaghetti, cooked and drained
  • 2 cans cream of chicken soup, 10.75 ounces each
  • 16 ounces Velveeta, cubed
  • 1 cup low sodium chicken broth, warmed
  • 1/2 cup milk
  • 1 packet dry ranch mix, 1.5 ounces
  • 3 cups cooked chicken, shredded or cubed
  • 5 to 7 slices bacon, cooked and diced
  • 1 cup sharp cheddar cheese, grated

Cooking Instructions

  1. Heat the oven to 350.
  2. In a big bowl, stir the spaghetti, soup, Velveeta, warm broth, milk, ranch mix and chicken together.
  3. Pour into a greased casserole dish.
  4. Top with the cheddar and the bacon.
  5. Bake uncovered 30 minutes, until bubbling.
Notes: Warm the broth before it goes in. Cold broth seizes the Velveeta into lumps that never fully melt in the oven.

Listen, anything with chicken, bacon, and ranch is going to be a crowd pleaser. It’s just a fact. This casserole leans all the way into that and the result is so creamy and comforting. I dare you to make it once and not put it in the rotation.

This is a solid church potluck dish, it travels well and reheats fine, and there are never leftovers to bring home. Feel free to use rotisserie chicken here too if you want to skip a step on a busy night. Chicken, bacon and ranch is a combination nobody in my house has ever argued with. Put it on spaghetti with melted Velveeta and dinner is handled.

Ingredients

  • 1 1/2 cups long grain white rice, uncooked
  • 2 cans cream of chicken soup
  • 2 cups water
  • 4 large boneless, skinless chicken breasts, or 6 smaller
  • Salt and pepper
  • 1 packet dry onion soup mix

Cooking Instructions

  1. Spread the dry rice evenly in a greased 13×9 baking dish. Whisk the soup and water together and spoon half of it over the rice. Let it stand 5 minutes.
  2. Arrange the chicken over the rice. Add salt and pepper to the rest of the soup mixture and spoon it over the chicken.
  3. Sprinkle the dry onion soup mix over everything and cover the dish tightly with foil.
  4. Bake at 350 for 1 1/2 to 2 hours without lifting the foil, until the chicken reads 165 in the thickest part.
  5. Take the foil off and let it sit 15 to 25 minutes while the rice soaks up the liquid and turns creamy.
Notes: The rest with the foil off is part of the recipe. The rice looks soupy when it comes out and sets up on the counter.

The name cracks me up. You literally cover it with foil, slide it in the oven, and you do not peek. That’s the rule. The rice gets perfectly soft, the chicken gets tender, and you don’t have to do a single thing while it bakes.

This is peak hotdish energy and I mean that as the highest compliment, it is the definition of set it and forget it comfort food. Just resist the urge to lift that foil early, the whole trick is letting the rice steam undisturbed. The name is the rule. The steam under the foil is what cooks the rice, and every peek lets it out.

Ingredients

  • 16 ounce package medium egg noodles
  • 2 cans cream of chicken soup, 10.5 ounces each
  • 1 can cream of mushroom soup, 10.5 ounces
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen vegetable mix
  • 8 ounces chicken broth
  • 2 cups shredded cheddar cheese
  • 8 ounces sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoons butter
  • 2 cups Panko bread crumbs

Cooking Instructions

  1. Heat the oven to 350. Boil the egg noodles one minute less than the package says, drain, and return them to the pot.
  2. Add both soups, the chicken, vegetables, broth, cheddar, sour cream, garlic powder, salt and pepper and stir until well combined.
  3. Pour into a greased 9×13 dish.
  4. Melt the butter and toss it with the Panko until the crumbs are coated.
  5. Scatter the Panko evenly over the top.
  6. Bake 20 minutes, until heated through and the top is crisp and golden.
  7. Rest a couple of minutes before serving.
Notes: Save a quarter cup of the noodle water and stir it in with the soups. It keeps the sauce and noodles from separating as it bakes.

All the cozy chicken pot pie feelings without messing with a pie crust. It tastes like the kind of dinner my grandma would have made on a chilly Sunday. Comfort food in casserole form, basically a warm hug in a 9×13. Frozen mixed vegetables work great here and save you a bunch of chopping, straight from the bag into the dish.

This one reheats really well in the oven the next day if you want the topping to stay a little crisp instead of going soft in the microwave. All of the pot pie filling, none of the crust work. Egg noodles stand in for the pastry and a buttery Panko top gives you the crunch. The noodles come out of the water a full minute early.

IngredientsCooking Instructions

Ingredients

  • 3 cups cooked, shredded chicken
  • 3 cups Minute Rice, prepared
  • 10.5 ounce can cream of chicken soup
  • 8 ounces cream cheese, softened
  • 1 packet Italian dressing seasoning mix
  • 1/8 teaspoon garlic powder
  • 1 cup chicken stock
  • Pinch of black pepper
  • 2 cups Colby Jack cheese, divided
  • 1 cup Panko bread crumbs
  • 4 tablespoons butter, cut into small pieces

Cooking Instructions

  1. Heat the oven to 350 and spray a 9×13 dish. Prepare the Minute Rice according to the box.
  2. In a big bowl, stir the chicken, rice, soup, softened cream cheese, Italian seasoning packet, garlic powder, pepper and stock until creamy with no lumps of cream cheese.
  3. Fold in 1 1/2 cups of the Colby Jack and spread the mixture into the dish.
  4. Top with the last 1/2 cup of cheese, then an even layer of Panko, then dot the butter pieces across the top.
  5. Bake uncovered for 25 to 30 minutes until the edges bubble and the Panko is deep golden. Rest 5 minutes before serving.
Notes: The cream cheese has to be fully softened or it leaves lumps that never smooth out. Thirty minutes on the counter does it.

The name is so sweet, and somehow the casserole really does live up to it. Tender chicken and fluffy rice baked together in a creamy sauce. It’s the kind of dinner you eat slowly, on the couch, in your softest sweatpants. This one is easy to stretch if you have extra mouths to feed, just add a bit more rice and sauce and nobody will notice it was stretched.

It also holds up in the fridge for a few days, so it’s a nice one to have around for lunch leftovers. I have made this casserole for years and it never gets old. My kids ask for it by name, and at a potluck it disappears before anything else on the table. The Italian seasoning packet and the cream cheese are what make it taste like more than a soup casserole.

Ingredients

  • 1/4 cup butter
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 3 tablespoons all purpose flour
  • 2 cups chicken broth
  • 1 cup half and half
  • 3/4 cup parmesan cheese, shredded
  • 3 cups cooked shredded chicken
  • 8 ounces spaghetti
  • 1 cup shredded colby jack cheese

Cooking Instructions

  1. Heat the oven to 350 and cook the spaghetti al dente.
  2. While it boils, melt the butter over medium low heat and cook the onion and garlic 3 to 5 minutes, stirring.
  3. Stir in the flour and cook one minute.
  4. Add the broth and let it come to a boil, then whisk in the half and half, stirring constantly.
  5. Stir in the parmesan until the sauce thickens a little, then take it off the heat.
  6. Add the chicken and pasta to the sauce and toss to coat.
  7. Pour into a greased 9×13 dish, top with the colby jack, cover with foil and bake 20 minutes until the cheese melts.
Notes: Keep whisking once the half and half and parmesan go in. Walk away and the sauce turns grainy.

This is one of those weeknight legends. Everybody at the table eats it without a single complaint. It’s creamy, a little cheesy, super forgiving if you have to swap stuff out, and reheats beautifully for lunch the next day. I’ve swapped in whatever pasta shape I have on hand plenty of times and it has never let me down.

This also freezes well before baking, so you can prep two pans at once and stash one for a night you need backup. When I know the week is going to be rough, this pan goes on the menu. A full 9×13 of creamy pasta, and the leftovers are the kind people go back for. The sauce is a simple white sauce built on butter, flour and broth.

IngredientsCooking Instructions

Ingredients

  • 8 ounces bowtie pasta, cooked al dente
  • 8 ounce block cream cheese
  • 4 cups shredded cooked chicken
  • 1 cup chicken broth
  • 8 ounces pasta sauce
  • 4 tablespoons butter, divided
  • 2 tablespoons minced garlic
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 2 cups colby jack cheese, divided
  • 3 tablespoons parmesan cheese
  • 1 cup mozzarella cheese

Cooking Instructions

  1. Heat the oven to 350. Spread the cooked bowties in a greased 9×13 glass dish and clear a spot in the middle for the block of cream cheese.
  2. Layer the chicken over the pasta, then pour the broth and the pasta sauce over everything.
  3. Dot the top with the butter in small tabs and the minced garlic in little spoonfuls.
  4. Sprinkle on the onion powder, garlic powder and 1 cup of the colby jack.
  5. Stir everything together, working around the cream cheese, then top with the second cup of colby jack and the parmesan.
  6. Bake 15 minutes, then stir well so the melted cream cheese works through the whole dish.
  7. Top with the mozzarella and broil 2 to 4 minutes until golden.
Notes: Season the chicken with a teaspoon of Italian seasoning for extra flavor. Penne works if bowties are not in the pantry.

Bowtie pasta is just the cutest, I’m sorry. And tossed in a creamy chicken sauce? It’s a 30 minute weeknight win. I think this is what I’d cook for someone if they were having a hard day and needed comfort food.

Any small pasta shape works fine if bowties aren’t in the cabinet, so don’t stress over the exact noodle. This comes together so fast it’s basically my answer for what to make when I completely forgot to plan dinner. I double this one almost every time. It is the creamy chicken pasta everyone in my house asks for, and leftovers make a good lunch.

IngredientsCooking Instructions

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 12 no boil lasagna noodles
  • 16 ounce jar creamy alfredo sauce
  • 4 1/2 cups shredded mozzarella, divided
  • 1/2 cup shredded parmesan
  • 2 cups cottage cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Parsley for the top, optional

Cooking Instructions

  1. Heat the oven to 400. Spread 1/3 cup of the alfredo over the bottom of an 11×14 dish and lay down 3 noodles without overlapping.
  2. Stir the shredded chicken into the rest of the alfredo. In another bowl, mix 3 cups of the mozzarella, the parmesan, cottage cheese, salt and pepper.
  3. Spread a third of the chicken over the noodles, then a third of the cheese mixture, then 3 more noodles.
  4. Repeat two more times so you end with noodles on top.
  5. Cover the top noodles with the remaining 1 1/2 cups mozzarella and a little parsley.
  6. Spray a sheet of foil, cover the dish and bake 60 minutes.
  7. Uncover and broil on low about 5 minutes until browned. Rest 5 to 10 minutes before cutting.
Notes: Cottage cheese and ricotta are interchangeable here. Cottage cheese is what my family uses, and it stays creamier through the long bake.

Imagine a regular lasagna and an Alfredo had a baby. That’s this. White sauce, layers of pasta, shredded chicken, all that melty cheese. It’s so pretty when you cut into it and a really good “I’m having people over” recipe.

This is a great make ahead dish for company, assemble the whole thing the day before and just bake it right before guests show up. It also freezes well once baked and cooled, so slice it and freeze portions flat for an easy future dinner. Three shortcuts make this a weeknight lasagna. A jar of alfredo, cottage cheese instead of ricotta, and noodles that do not need boiling.

IngredientsCooking Instructions

Ingredients

  • 6 boneless skinless chicken breasts
  • 1/2 cup butter, melted
  • 1 cup Italian breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • Salt and pepper
  • 1 1/2 cups marinara sauce
  • 8 ounces mozzarella, shredded or 6 slices
  • Cooking spray
  • 16 ounces spaghetti, cooked al dente, for serving

Cooking Instructions

  1. Heat the oven to 425. Put the melted butter in a bowl and mix both breadcrumbs, the parmesan, salt and pepper in a wide shallow bowl.
  2. Dip each breast in the butter, then press it into the crumbs. Use the back of a spoon to pack the crumbs on.
  3. Lay the chicken on a parchment lined or sprayed sheet pan.
  4. Spray the tops with cooking spray and drizzle any leftover butter over them.
  5. Bake 25 to 30 minutes, until golden.
  6. Spoon marinara over each breast and top with mozzarella.
  7. Broil 1 to 2 minutes until the cheese melts and browns. Serve over spaghetti.
Notes: Work fast on the butter and crumbs. The butter cools on the cold chicken within a minute and stops being sticky.

Crispy on the outside, juicy on the inside, blanketed in marinara and bubbly mozzarella. I always thought chicken parm was a restaurant only thing until I made it at home and realized it’s actually really doable. Total game changer. You can bread the chicken ahead of time and keep it in the fridge until you’re ready to bake, which makes weeknight timing so much easier.

Jarred marinara is totally fine here, I’ve never once felt the need to make my own sauce for this. This is restaurant chicken parmesan for about two dollars a serving. The same plate at Olive Garden is thirteen, and this one is better. Butter instead of egg is the dip.

Ingredients

  • 2 cups chopped carrots
  • 2 cups diced celery
  • 1 cup diced onion
  • 2 bay leaves
  • 12 cups chicken broth
  • 4 chicken breasts, cooked and shredded
  • 24 ounce bag Reames frozen homestyle egg noodles
  • Dash of nutmeg
  • 2 teaspoons lemon pepper seasoning
  • Salt and pepper to taste

Cooking Instructions

  1. Pour the broth into a big pot and add the carrots, celery, onion and bay leaves.
  2. Simmer 30 minutes until the vegetables are soft.
  3. Add the chicken, nutmeg and lemon pepper and bring to a boil.
  4. Add the frozen noodles and boil about 30 minutes, stirring often.
  5. Fish out the bay leaves, taste for salt and pepper, and serve.
Notes: Reames frozen noodles are thick and take a full half hour. Dried egg noodles cook in ten and give a thinner soup.

The chicken noodle soup that fixes everything. Sick day, sad day, freezing day, I just need something warm day. It’s the comfort food of all comfort foods, and homemade really does taste better than the can. I keep containers of this in the deep freezer at all times, because someone in this house is always getting sick right when I have no energy to cook.

If you’re freezing a batch, leave the noodles out and add fresh ones when you reheat it, they hold up much better that way. The minute the temperature drops below freezing, a pot of this soup is on my mind and I cannot let it go until it is made. Lemon pepper and a dash of nutmeg are the surprise. Neither one tastes like itself in the finished pot, but the soup tastes flat without them.

Ingredients

  • 1 pound chicken breast or thighs, cooked and shredded
  • 1 can corn, drained and rinsed
  • 1 can red beans, drained and rinsed
  • 1 can Rotel diced tomatoes
  • 1 can stewed tomatoes
  • 1 packet Hidden Valley Ranch buttermilk dry mix
  • 1 packet taco seasoning
  • 2 cups chicken broth
  • Sour cream, cheese, cilantro and tortilla chips for the top

Cooking Instructions

  1. Put the chicken, corn, beans, both cans of tomatoes, ranch mix, taco seasoning and broth in the Crock Pot and stir.
  2. Cook on low 2 to 4 hours.
  3. Ladle into bowls and top with sour cream, cheese and crushed chips.
Notes: The toppings make or break this soup. Have plenty of cheese, sour cream and tortilla strips out before anyone sits down.

This one feels like a little party in a bowl. Spicy, smoky, with tortilla strips and avocado and a squeeze of lime on top. Honestly the toppings are half the fun, I always set out a whole little buffet of them. The soup base freezes great on its own, just hold off on adding the crispy toppings until you actually serve it.

This is another one where rotisserie chicken is a totally fair shortcut if you’re short on time. This is the easy button, dump and go all the way. Every ingredient comes from a can or a packet, and even our twelve year old asks for it. The ranch packet is the surprise.

  • 1 package Uncle Bens long grain and wild rice, fast cook
  • 2 tablespoons butter
  • 4 stalks celery, diced
  • 1/3 yellow onion, diced
  • 2 carrots, diced
  • 3 tablespoons flour
  • 1 garlic clove, minced
  • 4 cups chicken broth
  • 12 ounces heavy whipping cream

Cooking Instructions

  1. Cook the rice per the box and spread it out to cool.
  2. Cook and shred the chicken.
  3. Saute the celery, onion, carrots and garlic in the butter about 10 minutes.
  4. Stir the flour into the vegetables and cook one minute.
  5. Add the chicken, broth and rice to the pot.
  6. Bring to a boil while stirring, then drop to a simmer.
  7. Slowly pour in the cream while stirring constantly.
  8. Simmer 20 minutes until thickened.
Notes: Spread the cooked rice on parchment to cool while you do the rest. Leftover or rotisserie chicken and frozen diced onion both save time.

This soup is so creamy and earthy and hearty, it’s basically a meal in a bowl. I think it tastes like a fancy bistro lunch. Pair it with a piece of crusty bread for dipping and you’ll feel very put together. This is a very Midwest soup to me, it feels like something you’d bring to a church potluck in the middle of winter.

It thickens up in the fridge overnight, so just thin it out with a little extra broth when you reheat it. This is the soup that feeds a crowd and still leaves leftovers worth fighting over. Creamy, full of rice, and ready in about an hour and a half. The rice cooks separately and goes in cooked.

  • 24 ounces chicken broth
  • 4 ounces green salsa
  • 4 ounces cream cheese, cubed
  • 1 cup heavy cream
  • 2 cups Monterey jack cheese
  • 28 ounce can mild enchilada sauce
  • Sour cream, cilantro and tortilla strips for the top

Cooking Instructions

  1. Combine the chicken, enchilada sauce, broth and salsa in a big pot.
  2. Bring to a simmer, then drop the heat to low.
  3. Add the cream cheese and Monterey jack and stir until melted into the sauce.
  4. In a small bowl, stir a ladle or two of the hot soup into the heavy cream to temper it.
  5. Pour the cream back into the pot and stir.
  6. Serve topped with sour cream, cilantro and tortilla strips.
Notes: Tempering the cream with a ladle of hot soup first keeps it from curdling when it hits the pot.

If enchiladas and soup got married, this would be their child. Cheesy, creamy, a little spicy, with all those classic enchilada flavors. Top with crushed tortilla chips and shredded cheese and prepare to make a second batch immediately. This freezes really well without the chips on top, just add those fresh when you reheat a bowl.

It’s also easy to make milder or spicier depending on what your kids can handle that week. This is the soup for the first cold week of fall. Enchilada sauce, cream cheese and a pile of shredded chicken, and it tastes like the inside of an enchilada. The heat drops to low before the cheese goes in.

Ingredients

  • 1 1/2 to 2 pounds boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups corn, fresh, canned or thawed frozen
  • 1 teaspoon olive oil or butter for the corn
  • 2 cups uncooked white or jasmine rice
  • Crema: 1/2 cup sour cream or Mexican crema
  • Juice of 1 lime, plus zest
  • 1/4 teaspoon chili powder
  • Salt to taste
  • 1 tablespoon mayonnaise, optional
  • Toppings: 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro or green onions

Cooking Instructions

  1. Season the chicken with chili powder, paprika, garlic powder, salt and pepper.
  2. Sear in a hot skillet with the oil about 5 to 7 minutes per side, until it reads 165. Slice it.
  3. In the same skillet, add the corn with a teaspoon of oil and leave it alone 3 to 5 minutes so it chars.
  4. Cook the rice per the package. Stir in a squeeze of lime, a pinch of salt and a drizzle of oil if you like.
  5. Whisk the sour cream, lime juice, chili powder, salt and mayo into a crema.
  6. Build each bowl with rice, sliced chicken, charred corn, a drizzle of crema, cotija and cilantro.
Notes: Thighs stay juicier than breasts. Either way, let the chicken rest five minutes before slicing so the juice stays in the meat.

This one tastes like a Chipotle order, but better and cheaper. Seasoned chicken, fluffy rice, that creamy charred street corn on top, all the toppings. It’s gorgeous in the bowl, too. The kind of dinner where you take a picture before you eat it.

Frozen corn works great for the street corn topping, just char it in a hot pan for a few minutes to get that grilled flavor. This is an easy one to build ahead in containers for lunches, everything holds up well once it’s all portioned out. Juicy chicken, charred corn, jasmine rice and a quick lime crema. It is the bowl my family asks for every week, and it takes about half an hour of real work.

Questions I Get About These Dinners

Can I make these ahead of time?

Most of these, yes. Casseroles like the chicken pot pie casserole and chicken alfredo lasagna can be assembled a day ahead and baked when you’re ready.

Do these recipes freeze well?

A lot of them do, especially the soups and shredded chicken dishes. I like freezing things flat in a bag so they thaw faster and take up less space in the deep freezer.

Can I double any of these for a crowd?

Absolutely, things like the crockpot bbq chicken and instant pot chicken thighs scale up easily for a potluck or a big family gathering.

What if my kids are picky eaters?

Start with the slow cooker chicken tacos or the street corn chicken rice bowl since everyone can build their own plate. That way nobody has to eat anything they’re unsure about.

Can I swap chicken breasts for thighs, or the other way around?

In most of these recipes, yes. Thighs tend to stay juicier in the slow cooker or Instant Pot, while breasts work great in the baked casseroles.

Save this list, pin it, screenshot it, do what you have to do. Future you standing in front of the open fridge at 5:47 PM will thank you.

Happy cooking. 💛
