15 Comfort Food Pasta Dinners (Better Than Takeout)

Listen, I love takeout as much as the next person.

But sometimes you order pasta from a place and it shows up in a soggy little container, lukewarm, with a sad piece of garlic bread, and it costs $24 and you’re like, hold on a minute.

I could have done this. I could have done this so much better.

And the thing is, you really, really can. Here are 15 comfort food pasta dinners that taste so much better than takeout, are way cheaper, and don’t even require you to put real pants on.

IngredientsCooking Instructions

Ingredients

  • 5 cups shredded rotisserie chicken
  • 2 cups chicken broth
  • 1 cup water
  • 1 packet buttermilk ranch dry seasoning
  • 3 cups penne pasta, uncooked
  • 1 1/2 cups mild cheddar cheese
  • 1 cup bacon pieces
  • 1 can cream of chicken soup
  • 8 ounces Velveeta, cubed

Cooking Instructions

  1. Pull the meat off a rotisserie chicken and shred it. You want about 5 cups.
  2. In a 4 quart crock pot, combine the chicken, cream of chicken soup, broth, water, ranch packet and Velveeta cubes. Cover and cook on high for 3 hours.
  3. Stir in the dry penne, push it under the liquid, and cover for 20 minutes.
  4. Stir well and cover for 10 more minutes, until the pasta is tender.
  5. Stir again, scatter the cheddar over the top and the bacon over the cheddar, and cover for 5 minutes until the cheese melts. Scoop into bowls.
Notes: Dry pasta goes in at the end only. Three hours in the sauce turns it to paste. Thirty minutes on high cooks it through.

The pasta my whole family asks for on repeat. Creamy, ranchy, cheesy, with tender chicken on top. The slow cooker does the work and you just boil pasta. Better than any creamy pasta I’ve ever ordered out. I throw the chicken in frozen most mornings and let the slow cooker handle the rest while everybody is at school or work.

By dinner the house smells like a ranch dressing miracle and nobody has to know how little effort it took. This one doubles easily if you know company is coming, and the leftovers reheat beautifully with a splash of milk stirred in. Did you know you can make pasta in the slow cooker? You can, and this is the proof. Even my mother in law, who is not easy to impress, asked for the recipe.

Rotisserie chicken means zero cooking before the crock pot. The creamy base needs three hours to come together, and the chicken just soaks up the ranch while it waits. Velveeta melts smooth and stays smooth over three hours of heat, which is why it is in here instead of a bag of shredded cheese. Cheddar and bacon on top for the last five minutes are the crack chicken part. If you like the sandwich version, this is the same flavor in a bowl.

IngredientsCooking Instructions

Ingredients

  • 1/4 cup butter
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 3 tablespoons all purpose flour
  • 2 cups chicken broth
  • 1 cup half and half
  • 3/4 cup parmesan cheese, shredded
  • 3 cups cooked shredded chicken
  • 8 ounces spaghetti
  • 1 cup shredded colby jack cheese

Cooking Instructions

  1. Heat the oven to 350 and cook the spaghetti al dente.
  2. While it boils, melt the butter over medium low heat and cook the onion and garlic 3 to 5 minutes, stirring.
  3. Stir in the flour and cook one minute.
  4. Add the broth and let it come to a boil, then whisk in the half and half, stirring constantly.
  5. Stir in the parmesan until the sauce thickens a little, then take it off the heat.
  6. Add the chicken and pasta to the sauce and toss to coat.
  7. Pour into a greased 9×13 dish, top with the colby jack, cover with foil and bake 20 minutes until the cheese melts.
Notes: Keep whisking once the half and half and parmesan go in. Walk away and the sauce turns grainy.

This is one of those weeknight legends. Creamy, a little cheesy, super forgiving. Reheats so beautifully for lunch the next day. I genuinely think it’s better than any chicken pasta on a chain restaurant menu. Rotisserie chicken from the store makes this one come together even faster on a busy night.

It is also a great way to use up leftover chicken sitting in the fridge from Sunday dinner. This is a great church potluck dish because it holds well in a covered dish and still tastes great after sitting for a while. When I know the week is going to be rough, this pan goes on the menu. A full 9×13 of creamy pasta, and the leftovers are the kind people go back for. The sauce is a simple white sauce built on butter, flour and broth.

No cans of soup, and it takes about ten minutes while the pasta boils. Three cups of shredded chicken is the hard part done. Rotisserie or a batch from the Instant Pot, either one works. The four things I want in a chicken casserole are spaghetti, cheese inside and on top, a white sauce, and tender chicken. This has all four.

IngredientsCooking Instructions

Ingredients

  • 8 ounces bowtie pasta, cooked al dente
  • 8 ounce block cream cheese
  • 4 cups shredded cooked chicken
  • 1 cup chicken broth
  • 8 ounces pasta sauce
  • 4 tablespoons butter, divided
  • 2 tablespoons minced garlic
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 2 cups colby jack cheese, divided
  • 3 tablespoons parmesan cheese
  • 1 cup mozzarella cheese

Cooking Instructions

  1. Heat the oven to 350. Spread the cooked bowties in a greased 9×13 glass dish and clear a spot in the middle for the block of cream cheese.
  2. Layer the chicken over the pasta, then pour the broth and the pasta sauce over everything.
  3. Dot the top with the butter in small tabs and the minced garlic in little spoonfuls.
  4. Sprinkle on the onion powder, garlic powder and 1 cup of the colby jack.
  5. Stir everything together, working around the cream cheese, then top with the second cup of colby jack and the parmesan.
  6. Bake 15 minutes, then stir well so the melted cream cheese works through the whole dish.
  7. Top with the mozzarella and broil 2 to 4 minutes until golden.
Notes: Season the chicken with a teaspoon of Italian seasoning for extra flavor. Penne works if bowties are not in the pantry.

Bowtie pasta is just adorable, sorry. And tossed in a creamy chicken sauce? Pure 30 minute weeknight magic. This is what I would cook for someone if they were having a hard day and needed a real life food hug. Cube the chicken small so it cooks fast, and have the sauce ingredients measured out before you start the pasta water.

That way the whole thing really does come together in one pan and one pot. Leftovers keep for a few days in the good Tupperware, and a splash of milk brings the sauce right back to life when you reheat it. I double this one almost every time. It is the creamy chicken pasta everyone in my house asks for, and leftovers make a good lunch. The block of cream cheese sits in the middle of the pan on purpose.

It melts in the oven and gets stirred through at the halfway mark instead of fighting it cold. Boil the pasta until just al dente and drain it a minute before the box says. It keeps cooking in the sauce and comes out right. A side salad or steamed vegetables is all it needs. A little fresh basil or parsley on top at the end makes it look like you tried harder than you did.

IngredientsCooking Instructions

Ingredients

  • 6 boneless skinless chicken thighs
  • 2 packets zesty Italian dressing mix, 1 ounce each
  • 32 ounces chicken broth
  • 2 packages cream cheese, 8 ounces each
  • 16 ounces medium egg noodles, boiled 3 minutes only
  • Salt and pepper to taste

Cooking Instructions

  1. Put the chicken thighs in a 6 to 8 quart crock pot, sprinkle the dressing mix over them, and pour in the broth.
  2. Cover and cook on low 6 to 8 hours.
  3. Move the chicken to a plate and shred it with two forks.
  4. Drop the cream cheese into the broth in the crock, put the lid on, and let it sit 10 minutes.
  5. Whisk the cream cheese and broth into a thin sauce. It will look runny.
  6. Add the par boiled noodles and the shredded chicken.
  7. Leave the lid off and stir until the pasta is coated and the sauce thickens to the consistency you want, about 30 minutes.
Notes: Three minutes in boiling water is all the noodles get. They finish in the crock, and fully cooked noodles turn to mush.

Garlicky, creamy, restaurant style Alfredo, but the slow cooker did the work. Tastes like the kind of pasta you’d order at a cozy little Italian place, except cheaper, and you didn’t have to leave the house. Chicken thighs are the move here since they stay so tender after a long slow cook. Boil your noodles right before serving so they don’t turn mushy sitting in the crockpot. This is an easy one to set in the morning before the kids even wake up, and it will be ready and waiting the second everyone walks in the door starving.

To say this is a hit in our house would be an understatement. The neighborhood kids go nuts when they hear it is alfredo night. The sauce looks hopelessly thin when you first whisk it. Trust it. Once the noodles and chicken go in and sit uncovered, it turns into the creamiest alfredo you have had.

Thighs instead of breasts because they do not dry out over eight hours. They shred into soft strands that get lost in the sauce in the best way. The lid stays off at the end on purpose. That is how the sauce reduces from soup to alfredo instead of staying soupy.

IngredientsCooking Instructions

Ingredients

  • 1/2 cup salted butter, 1 stick
  • 1 1/2 cups heavy whipping cream
  • 1 1/4 cups grated Parmesan cheese
  • Salt, pepper and garlic powder to taste

Cooking Instructions

  1. Melt the butter and cream together in a saucepan over medium low heat and whisk until it comes to a rolling boil.
  2. Add the Parmesan.
  3. Whisk constantly about 10 minutes until the cheese melts into the sauce.
  4. Take it off the heat and let it stand 3 to 5 minutes. It thickens as it sits.
  5. Pour over cooked pasta and toss, then top with chicken or shrimp.
Notes: Use Kraft or Sargento grated Parmesan. The green can works in a pinch but the sauce comes out grainy.

Once you make Alfredo from scratch, the jarred stuff feels like a sad memory. This recipe takes about 10 minutes and tastes like an actual restaurant. Toss it with fettuccine and a little black pepper and you’re golden. Freshly grated cheese melts so much smoother than the bagged pre shredded kind, so if you have five extra minutes it is worth it. This sauce also makes a fantastic base for chicken Alfredo lasagna or a quick baked pasta.

It does not love the freezer since cream sauces can separate, but it reheats fine on the stove over low heat with a little extra milk whisked in. My family asks for chicken alfredo constantly, and this sauce is why I never mind. Four ingredients and about twenty minutes, and it tastes like the Italian place. It is not low fat and it does not pretend to be. Real butter and heavy cream are the recipe, and it is a once in a while dinner for good reason.

The sauce is runny when it comes off the stove. Give it five minutes and it thickens to coat the pasta. Do not add more cheese to fix it early. Any more than five or six ingredients and I lose interest. This is four, and it has been on my weeknight list for years.

IngredientsCooking Instructions

Ingredients

  • 16 ounces ziti or penne
  • 1/4 cup olive oil
  • 1 pound Italian sausage
  • 3 cloves garlic, minced
  • 14.5 ounce can tomato sauce
  • 14.5 ounce can petite diced tomatoes
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil, chopped, divided
  • 1 cup heavy cream
  • 1 teaspoon cornstarch
  • 2 large eggs, lightly beaten
  • 16 ounces cottage cheese
  • 1 cup grated parmesan
  • 16 ounces mozzarella, cut into 1/4 inch cubes, divided

Cooking Instructions

  1. Brown the sausage with the garlic. Add the tomato sauce, diced tomatoes, oregano, dried basil, salt and pepper and simmer.
  2. Boil the ziti al dente, drain, rinse with cold water, and toss with the olive oil. Keep the pot.
  3. Stir the beaten eggs, cottage cheese, parmesan and half the mozzarella together.
  4. In the empty pasta pot, bring the cream and cornstarch to a low boil, stirring 3 to 4 minutes until it thickens.
  5. Stir two thirds of the sauce, the ziti, the cream and the cheese mixture together and pour into a sprayed baking dish. Top with the rest of the sauce, the rest of the mozzarella and half the fresh basil.
  6. Bake covered at 350 for 25 minutes, then uncovered 25 minutes more. Rest a few minutes and finish with the last of the basil.
Notes: Freeze a second pan unbaked, wrapped twice. Thaw it overnight and bake as written with ten extra minutes.

Saucy, cheesy, golden on top, the kind of pasta bake that makes you feel like you have your life together. I bring this to potlucks and friends actually fight over it. I have witnessed this. This is a fantastic make ahead dish. Assemble the whole thing the night before, cover it, and stash it in the fridge until you’re ready to bake.

It also freezes really well unbaked, which makes it one of my go to meals to drop off for a friend with a new baby. Learning how to make creamy baked ziti consumed me for a while. I wanted the pasta I made at home to taste like it came from a restaurant, and this one does. The cream thickened with a little cornstarch is what makes it creamy baked ziti and not just baked ziti. Four minutes of stirring in the empty pasta pot.

It is built in stations. Sauce, noodles, cheese mixture, cream, all done at different points as you have time, then one big stir brings it together. I make my parents dinner most weeks, and this is the one I double. One pan for them, one for the freezer, and texas toast from the freezer section on the side.

IngredientsCooking Instructions

Ingredients

  • 16 ounces thin spaghetti, cooked al dente
  • 1/2 cup butter, plus more for the pan
  • 4 cups cooked shredded chicken
  • 2 cans cream of chicken soup
  • 2 cups sour cream
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons parmesan cheese
  • 2 cups shredded mozzarella
  • 1/2 to 1 cup Panko bread crumbs

Cooking Instructions

  1. Heat the oven to 350 and butter a 9×13 dish.
  2. Stir the butter, chicken, soup, sour cream, salt, pepper, parmesan and milk together, then add the cooked spaghetti.
  3. Pour into the dish and cover with the mozzarella.
  4. Bake 30 minutes.
  5. Scatter the Panko over the top and bake 10 minutes more.
Notes: This can be assembled up to two days ahead and kept covered in the fridge. Add 10 to 20 minutes to the bake time if it goes in cold.

Creamy chicken pasta hiding under a golden cheese topping. The whole table goes quiet for the first few bites, which is honestly the highest compliment a dinner can get. So much better than restaurant chicken pasta. Leftover turkey works just as well as chicken here, so keep this one in your back pocket for the week after a holiday. A handful of frozen peas stirred in is an easy way to sneak in some vegetables.

It reheats beautifully in the oven under foil so the topping doesn’t dry out. This is the pan I show up with when someone has a newborn and no free hands. It reheats well and every kid at the table eats it. Thin spaghetti cooked just al dente is the right noodle. It bakes another forty minutes in the sauce, so soft noodles going in come out mushy.

The Panko waits until the last ten minutes. Put it on at the start and it soaks into the sauce instead of toasting. Four cups of chicken sounds like a lot, and it is what makes this a dinner instead of a side. A rotisserie chicken gets you most of the way there.

Ingredients

  • 5 cups rotini pasta, cooked al dente
  • 1 pound Italian sausage
  • 1/2 pound ground beef
  • 1/2 cup green pepper, diced
  • 1/2 cup white onion, diced
  • 1 tablespoon butter
  • 24 ounce jar spaghetti sauce
  • 4 ounces water
  • 4 ounces pepperoni
  • 2 cups mozzarella cheese

Cooking Instructions

  1. Cook the rotini 1 to 2 minutes short of the box time, drain, and rinse with cold water.
  2. Brown the sausage and beef together and drain. In the same pan, cook the onion and pepper in the butter until soft.
  3. Stir the noodles, sauce, water, meat and vegetables together in a big bowl. Dice all but 10 of the pepperoni and stir those in too.
  4. Pour it into a greased 9×13, top with the mozzarella, and lay the last 10 pepperoni on top.
  5. Bake uncovered at 350 for 25 to 30 minutes.
Notes: Rinse the pasta with cold water after draining. It stops the cooking so the noodles stay firm through the bake.

It tastes like pizza but it’s pasta. Pepperoni, mozzarella, marinara, all baked together. The kids absolutely lose their minds for this and I cannot blame them. Way better than that one greasy delivery pizza place. This is a great one for picky eaters since you can load half the pan with pepperoni and leave the other half plain cheese.

Any leftover pizza toppings hiding in your fridge can get tossed in too. It reheats great for school lunches the next day, warm or cold. A friend showed up at our door during a fourteen day stay home stretch with a pan of her pizza pasta, a loaf of french bread and a caesar salad. This is that recipe. It tastes like the pasta bake from Pizza Hut, and that is the point.

Sausage, pepperoni, peppers and onions in a red sauce under a lot of mozzarella. Make it ahead and bake it later. It sits in the refrigerator for a day with no harm, which is why I pass it along to other families in a rough week. Leave out anything you do not want or add anything you do. Mushrooms, black olives, and a pinch of red pepper flakes have all made an appearance.

  • 7 ounce package cheese tortellini
  • 12 ounces marinara sauce
  • 8 ounces Alfredo sauce
  • 1 1/2 tablespoons dried Italian seasoning, divided
  • 1 cup shredded mozzarella
  • 1/4 cup Parmesan cheese

Cooking Instructions

  1. Boil the tortellini 2 to 3 minutes less than the package says and drain.
  2. In a medium pot, simmer the marinara, Alfredo and half the Italian seasoning together 10 minutes.
  3. Stir the tortellini into the sauce and pour into a greased 9 inch pie dish.
  4. Top with the mozzarella, Parmesan and the rest of the seasoning.
  5. Broil 5 minutes or less, until the cheese melts and starts to brown.
Notes: Any tortellini or ravioli works. Cook it al dente every time, because it finishes cooking under the broiler.

Cheese stuffed tortellini, baked in marinara, with even more cheese on top. It’s pretty much cheese inception. Fast enough for a weeknight, satisfying enough that nobody is asking for takeout. Frozen tortellini works just fine here, so there is no need to thaw anything before you start. Brown a little Italian sausage and stir it in if you want to stretch it into a heartier dinner.

This one goes straight from fridge to oven the next day if you have extra, no fuss involved. A pasta bake in a pie dish, done in about fifteen minutes. It is the dinner for the night when everyone gets home at six and hungry. Marinara and Alfredo stirred together is pink sauce, and it is the whole flavor of the dish. Half a jar of each and nobody misses the from scratch version.

The pie dish is the right size for four. It also means the cheese on top browns evenly under the broiler instead of burning at the corners of a 9×13. Any cooked meat makes it heartier. Leftover chicken, browned sausage, or a handful of pepperoni stirred into the sauce.

Ingredients

  • 1/2 pound Italian sausage
  • 1/2 pound ground beef
  • 45 ounces spaghetti sauce
  • 20 ounces cottage cheese
  • 1 egg
  • 1/2 cup shredded parmesan
  • 1 tablespoon Italian seasoning
  • 2 cups mozzarella, divided
  • 9 regular lasagna noodles, uncooked, broken in half

Cooking Instructions

  1. Brown the sausage and beef together, drain, and stir the meat into the spaghetti sauce. In another bowl, stir the cottage cheese, egg, parmesan and Italian seasoning together.
  2. Spray the crock pot. Layer a third of the meat sauce, 3 broken noodles, half the cottage cheese mixture, and 1 cup of mozzarella.
  3. Repeat: a third of the sauce, 3 noodles, the rest of the cottage cheese mixture, the second cup of mozzarella.
  4. Finish with the last 3 noodles and the last third of the sauce, covering every noodle.
  5. Cover and cook on low for 4 hours, up to 6 depending on the crock pot. Do not use high. Rest 15 minutes with the lid on before cutting.
Notes: High heat scorches the sauce against the sides before the noodles in the middle soften. Low, and check it at four hours.

All the cozy lasagna feelings, none of the oven heat or layering stress. The slow cooker does the whole thing for you. I think this might actually be better than the lasagna I order at restaurants. Don’t tell them I said that. Break the noodles to fit your crockpot instead of trying to keep them whole, nobody will ever know.

This is such a good one for a hot day since it does not heat up the kitchen like the oven would. A quick garlic bread and a bagged salad and dinner is basically done. Three kinds of cheese, two kinds of meat, and a crock pot that does every bit of the work. This is the dinner for the Saturday I look up at six with no plan. The noodles go in dry and broken in half.

Four hours in sauce softens them completely, with no boiling and no draining. Cottage cheese instead of ricotta is cheaper, lighter, and what I grew up with. The egg is what sets it so the layers hold when you cut. There is no cheese on the very top of this one on purpose. It keeps the edges from burning over four hours, and the mozzarella inside does the stretching.

IngredientsCooking Instructions

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 12 no boil lasagna noodles
  • 16 ounce jar creamy alfredo sauce
  • 4 1/2 cups shredded mozzarella, divided
  • 1/2 cup shredded parmesan
  • 2 cups cottage cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Parsley for the top, optional

Cooking Instructions

  1. Heat the oven to 400. Spread 1/3 cup of the alfredo over the bottom of an 11×14 dish and lay down 3 noodles without overlapping.
  2. Stir the shredded chicken into the rest of the alfredo. In another bowl, mix 3 cups of the mozzarella, the parmesan, cottage cheese, salt and pepper.
  3. Spread a third of the chicken over the noodles, then a third of the cheese mixture, then 3 more noodles.
  4. Repeat two more times so you end with noodles on top.
  5. Cover the top noodles with the remaining 1 1/2 cups mozzarella and a little parsley.
  6. Spray a sheet of foil, cover the dish and bake 60 minutes.
  7. Uncover and broil on low about 5 minutes until browned. Rest 5 to 10 minutes before cutting.
Notes: Cottage cheese and ricotta are interchangeable here. Cottage cheese is what my family uses, and it stays creamier through the long bake.

Imagine if regular lasagna and chicken Alfredo had a baby. That’s this. White sauce, layers of pasta, shredded chicken, and so much melty cheese. So pretty when you cut into it. Rotisserie chicken saves a ton of time on this one since the shredding is already done for you. Let it rest for a good ten minutes after baking so the layers hold together when you slice it.

It freezes beautifully in individual squares, which makes for the easiest lunch you’ll ever pull out of the deep freezer. Three shortcuts make this a weeknight lasagna. A jar of alfredo, cottage cheese instead of ricotta, and noodles that do not need boiling. You can build the whole pan without baking it, cover it, and put it in the fridge. The next night the only work left is turning on the oven.

Spraying the foil before it goes on is a small thing that saves the top. Without it the mozzarella welds itself to the foil and comes off in one sheet. The ten minute rest at the end is real. Cut it straight out of the oven and the layers slide. Wait, and it holds in clean squares.

  3. In a sprayed 11×15 dish, layer 2 cups meat sauce, 5 noodles, half the cottage cheese, 8 mozzarella slices, 2 cups sauce, 5 noodles, the rest of the cottage cheese, 8 mozzarella slices, 1 1/2 cups sauce, 5 noodles, and the remaining sauce.
  4. Top with the remaining mozzarella, the parmesan and the last of the basil. Cover with sprayed foil and refrigerate 24 hours if you can.
  5. Bake at 375 for 25 minutes covered, then 25 minutes uncovered. Cool 15 minutes before cutting.
Notes: The overnight rest is where the noodles finish softening and the flavors settle. It is the reason this one tastes like a restaurant lasagna.

For the people in my life (me) who are not really into ricotta. This swaps it for cottage cheese and the texture is honestly perfect. Creamy, layered, beautifully cheesy. Restaurants can’t compete. If you or your kids are cottage cheese skeptics, just blend it smooth first and nobody will ever notice the texture.

This is a great one to make on a Sunday and bake off later in the week. It reheats just as well as classic lasagna, so don’t be afraid to make the full pan. When my husband and I were first married I made lasagna. Turns out he does not like ricotta. His mom used cottage cheese, and it turns out that is better.

The ingredient list looks long and it is deceiving. It is one pot of sauce, one bowl of cheese, and a stack of layers. Soaking the noodles in hot water instead of boiling them means no pot, no strainer, and noodles that are pliable enough to layer without tearing. This is my favorite lasagna, the one I make when people are coming over, and the one that gets requested at every holiday.

Ingredients

  • 16 ounces elbow macaroni
  • 1 tablespoon extra virgin olive oil
  • 10 tablespoons butter, divided
  • 1/3 cup all purpose flour
  • 3 cups whole milk
  • 1 cup heavy whipping cream
  • 4 cups sharp cheddar, shredded
  • 2 cups mozzarella, shredded
  • Salt and pepper to taste
  • 1 1/2 cups Panko crumbs
  • 1/2 cup Parmesan, shredded
  • 1/4 teaspoon smoked paprika

Cooking Instructions

  1. Heat the oven to 350 and grease a 4 quart baking dish. Toss the cheddar and mozzarella together in a bowl.
  2. Boil the pasta one minute short of al dente, drain, rinse with cold water, and toss with the olive oil.
  3. Melt 6 tablespoons of the butter in a deep saucepan and whisk in the flour over medium heat for about a minute until golden and bubbly.
  4. Gradually whisk in the milk and cream until smooth, then keep whisking 2 more minutes after you see bubbles. Season with salt and pepper.
  5. Add the cheese two cups at a time, stirring until smooth after each. The sauce will be thick.
  6. Stir in the cooled pasta until every piece is coated and pour into the dish.
  7. Melt the remaining 4 tablespoons butter and mix with the Panko, Parmesan and paprika. Scatter over the top.
  8. Bake uncovered about 30 minutes until bubbling and golden. Broil 2 minutes for a crispier top.
Notes: Rinsing the pasta with cold water stops it cooking and washes off the starch that would make the sauce gummy.

The mac and cheese of mac and cheeses. Creamy on the inside, golden and crispy on top. I bring this to every family dinner and the dish always comes home empty. Better than any restaurant mac you’ve ever paid $14 for. A blend of two or three cheeses melts smoother than just one, so raid whatever odds and ends you have in the cheese drawer.

This is the dish I am always asked to bring to a potluck, and I never say no. It also travels really well in a covered dish if you wrap it in a towel to keep it warm on the drive. Our son is my comfort food judge, and this is the mac and cheese he signed off on. It goes next to grilled burgers, Easter ham, and everything between. Six cups of cheese is not a typo.

Four of sharp cheddar for flavor and two of mozzarella for the stretch, and the sauce holds all of it. The sauce is a classic white sauce, and the only rule is to keep whisking. It needs about five minutes of attention and then it is done. The Panko top with Parmesan and paprika is what makes this a baked mac and cheese instead of a stovetop one. Do not skip the two minutes under the broiler.

IngredientsCooking Instructions

Ingredients

  • 16 ounces uncooked pasta shells
  • 4 cups water
  • 1 1/2 teaspoons salt
  • 4 tablespoons butter
  • 2 cups white cheddar, freshly shredded from an 8 ounce block
  • 4 ounces American cheese, 4 to 6 slices
  • 1 cup milk
  • 1 teaspoon Dijon mustard
  • Dash of hot sauce, optional

Cooking Instructions

  1. Put the shells, water, salt and butter in the Instant Pot and stir.
  2. Lock the lid, set the valve to sealing, and cook on high pressure 4 minutes.
  3. Quick release the pressure and remove the lid once the float valve drops.
  4. Stir in the white cheddar, American cheese and milk.
  5. Add the Dijon and hot sauce and stir until the cheese melts and the sauce is smooth.
Notes: Shred the cheddar from a block. Bagged shredded cheese is coated with starch and the sauce never gets smooth.

This is the actual Panera mac, except you make it in the Instant Pot for, like, a fraction of the price. Same creamy, dreamy white cheddar magic. Why drive there when you can make it in 15 minutes in your kitchen? White cheddar is really what makes this taste like the original, so try not to swap it for regular cheddar if you can help it. This comes together so fast it works even on the nights you forgot to plan dinner at all.

Leftovers reheat great with a splash of milk stirred in over low heat. I am a big fan of any copycat recipe that saves me money, and this one makes four times what a Panera bowl costs for the same price. Four minutes under pressure is all the shells need. The water is measured so there is nothing to drain, and the starch left behind thickens the sauce.

American cheese is the secret to the creamy texture. The white cheddar brings the flavor and the American keeps the sauce from breaking. The teaspoon of Dijon is what makes people ask what is in it. It does not taste like mustard, it just makes the cheese taste more like cheese.

Ingredients

  • 2 pounds chuck roast
  • 2 tablespoons vegetable oil
  • 1 tablespoon steak seasoning
  • Salt and pepper
  • 1/2 onion, diced
  • 4 cups water
  • 4 heaping teaspoons Better than Bouillon beef base
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon minced garlic
  • 24 ounce bag Reames frozen egg noodles

Cooking Instructions

  1. Rub the roast with steak seasoning, salt and pepper.
  2. Brown it in the oil in a large skillet a couple of minutes per side.
  3. Move the roast to a 6 quart crock pot, add the onion, and cook on low 6 to 8 hours.
  4. Lift the roast out, shred it and trim away any fat, then return the meat to the crock.
  5. Whisk the water, beef base, Worcestershire and garlic together, pour over the beef, and cook 30 minutes more.
  6. Meanwhile boil the egg noodles per the bag, about 40 minutes.
  7. Drain and stir the noodles into the beef.
Notes: Chuck roast makes its own liquid, so nothing goes in the crock with it but the onion. The broth comes at the end.

Tender shredded beef in a rich gravy over noodles. This is church basement potluck food in the best possible way. Cozy, hearty, completely zero stress. The kind of pasta dinner that hugs you back. A cheap chuck roast works wonderfully here and gets fall apart tender after its long day in the slow cooker. Serve it over mashed potatoes instead of noodles sometimes for a fun switch up.

The gravy thickens even more overnight in the fridge, so leftovers might need a splash of broth when you reheat them. Save this list for the next time you’re tempted to spend $40 on lukewarm takeout pasta. Future you, in your softest sweatpants on the couch with a real homemade dinner, will thank you. 💛 Fork tender beef in a thick gravy over Reames noodles is the dinner my family calls comfort food. It is mostly hands off and the kitchen smells amazing all day. Chuck roast is the cut.

It has enough fat to stay moist through eight hours, and it shreds apart with two forks when it is done. A couple of minutes a side in a hot skillet before it goes in the crock is the one step that builds real flavor. Do not skip it to save five minutes. The noodles cook on their own so you control how much liquid ends up in the pot. Cooked in the crock they drink every drop of gravy.

Questions I Get About These Dinners

Can I make any of these ahead of time?

Most of the baked pasta dishes like the ziti, tortellini casserole, and both lasagnas are great assembled the night before and baked the next day. Just cover and refrigerate, then add a few extra minutes to the bake time since it’s starting cold.

Do these pasta dinners freeze well?

The baked casseroles and lasagnas freeze beautifully, especially in individual portions for easy lunches later. Cream based sauces like Alfredo can separate a bit in the freezer, but they smooth back out with a little milk when reheated on the stove.

What if my kids are picky eaters?

The pizza pasta bake and the mac and cheese are usually the safest bets, and you can always keep toppings on the side so everyone builds their own plate. Simple swaps like plain noodles under the sauce also help picky eaters ease into a new dish.

Can I double any of these recipes?

Yes, the slow cooker recipes and the baked casseroles all double easily if you’re feeding a crowd or just want extra for the deep freezer. Just make sure your crockpot or baking dish is actually big enough before you commit.

What are good swaps if I’m missing an ingredient?

Rotisserie chicken can stand in for cooked chicken in almost every recipe here, and any short pasta shape can usually sub for another in a pinch. Ground beef and shredded chicken are pretty interchangeable too if that’s what you have on hand.
