18 No-Bake Desserts Nobody Can Resist

The first really hot day of the year, I always have the same internal moment. Someone wants dessert.

The kitchen is already 84 degrees. The thought of turning on the oven feels like a personal attack.

So what’s a person to do? Make something amazing without ever heating up the house, that’s what.

I have spent years collecting the no bake desserts that actually deliver, the ones that taste like real, decadent, made from scratch desserts even though you, you know, didn’t bake anything.

Here are 18 no bake desserts nobody can resist, perfect for those long summer days when the oven is officially canceled.

IngredientsCooking Instructions

Ingredients

  • 1 package graham crackers
  • 2 packages instant French vanilla pudding, 3.4 ounces each
  • 3 cups milk
  • 8 ounces Cool Whip, thawed
  • 16 ounces chocolate frosting

Cooking Instructions

  1. Beat the pudding mix and milk in a big bowl until thick.
  2. Fold in the Cool Whip.
  3. Spray a 9×13 dish and lay down a layer of graham crackers, breaking them to fit.
  4. Spread half the pudding over the crackers.
  5. Add a second layer of crackers, the rest of the pudding, and a third layer of crackers.
  6. Take the lid off the frosting and microwave it 30 seconds, then pour and spread it over the top crackers.
  7. Cover and refrigerate 24 hours.
Notes: The full 24 hours is the recipe. The crackers soften into cake overnight, and a six hour eclair cake still crunches.

The first time I made this I was so suspicious. Graham crackers and pudding turning into actual cake overnight? But I’m telling you, it works. Layers of creamy vanilla, rich chocolate, and graham crackers that magically become soft cake. Pure summer dessert magic.

This one actually gets better the longer it sits, so make it the night before if you can. A full 24 hours in the fridge is when those graham crackers turn into that soft, cake like texture everyone loves. It also travels great for potlucks since it’s already cold and ready to go. Just cover the pan tight and it’ll hold in the fridge for several days without going soggy on you.

IngredientsCooking Instructions

Ingredients

  • Cookie dough: 6 tablespoons butter, room temperature
  • 1/3 cup dark brown sugar
  • 1/8 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup flour, heat treated
  • 1 teaspoon milk
  • 1/3 cup mini chocolate chips
  • Crust: 20 Oreos, crushed
  • 1/4 cup butter, melted
  • Filling: 4 ounces cream cheese, room temperature
  • 1/4 cup white sugar
  • 1/4 cup dark brown sugar
  • 8 ounces Cool Whip, thawed
  • 1/2 cup mini chocolate chips, divided

Cooking Instructions

  1. Cream the 6 tablespoons butter with the 1/3 cup brown sugar and 1/8 cup sugar, then mix in the vanilla, flour and milk, then the 1/3 cup chips.
  2. Roll the dough into balls a half to three quarter inch across and freeze them.
  3. Crush the Oreos fine, stir in the melted butter, and press into a greased 9 or 10 inch pie pan. Freeze at least 20 minutes.
  4. Beat the cream cheese with both sugars until smooth, then mix in the Cool Whip.
  5. Stir in 1/4 cup chips and about three quarters of the frozen dough balls.
  6. Scrape the filling into the crust and smooth the top.
  7. Top with the remaining dough balls and chips and freeze at least 60 minutes before slicing.
Notes: If the dough balls come out too big, cut them in half after they freeze. Small pieces mean cookie dough in every bite instead of a few big lumps.

Edible cookie dough piled into a buttery crust. There’s no oven involved and there’s no shame either. It’s basically pure celebration in pie form, and I challenge you to take just one bite. You can’t. Nobody can.

A store bought graham crust works perfectly here if you’re short on time, and honestly I use one most weeks. Nobody at the table has ever complained. This slices cleaner if you pop it in the freezer for twenty minutes right before serving. It also freezes well whole, so you can make it ahead for a birthday and just thaw it in the fridge overnight.

IngredientsCooking Instructions

Ingredients

  • 16.25 ounce box white cake mix, plus the eggs and oil on the box
  • 6 ounce package strawberry Jell-O
  • 2 cups boiling water
  • 16 ounce container whipped topping, thawed
  • 1 pint fresh strawberries

Cooking Instructions

  1. Bake the cake in a 9×13 per the box directions and let it cool a bit.
  2. Poke holes all over the cake with the handle of a wooden spoon.
  3. Stir the Jell-O into the boiling water until dissolved.
  4. Pour the Jell-O evenly over the cake.
  5. Refrigerate 3 to 4 hours.
  6. Spread the whipped topping over the top and cover with sliced strawberries.
Notes: Any flavor of Jell-O works the same way. Blueberry, orange, lime. The strawberry is just the one my mom likes best.

The cake itself is a quick bake, but the magic happens cold. You poke holes, soak it with strawberry, top with whipped cream, and chill. It’s so pretty and pink and tastes exactly like summer feels. Goes with iced coffee on the porch.

Bake the cake the night before so all you have to do the day of is poke, soak, and top. It genuinely tastes better after a full day in the fridge, so this is a real make ahead dessert for cookouts. Swap in a different flavor of gelatin if strawberry isn’t your family’s favorite. Cherry and raspberry both work great and nobody will know you switched it up.

IngredientsCooking Instructions

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour, heat treated
  • 14 ounce can sweetened condensed milk
  • 1 cup chocolate chips
  • 1/2 cup mini M&Ms
  • Topping: 1/2 cup creamy peanut butter
  • 1/2 cup milk chocolate chips

Cooking Instructions

  1. Beat the butter and brown sugar in a mixer until fluffy, then mix in the vanilla.
  2. Add the flour and condensed milk, alternating between the two, until combined.
  3. Stir in the chocolate chips and M&Ms.
  4. Press into an 8×8 dish lined with parchment, cover with foil, and freeze a couple of hours.
  5. Melt the peanut butter and milk chocolate chips together and spread over the frozen bars.
  6. Cover and freeze about an hour more until the topping sets, then cut into 16 pieces.
Notes: Bake the flour at 350 for about 10 minutes before it goes in. Raw flour is the only thing in cookie dough that is actually unsafe.

Sometimes I just want a bowl of cookie dough and a spoon. Don’t make it weird, you know exactly what I mean. This is safe to eat cookie dough, no eggs, no flour, just pure soft brown sugar bliss. Keep a tub of this in the deep freezer and scoop it straight out when the craving hits.

It softens up fast on the counter so you don’t even need to wait long. Roll it into little balls and freeze them flat on a tray, then bag them up for a grab and go treat the kids can help themselves to. This is the dessert I bring to parties, and it is the number one dessert in our house. A small square goes a long way because they are so rich.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt, to taste
  • 1 cup chocolate chips
  • Milk, optional, for texture
  • Optional: 1/2 cup heat treated flour

Cooking Instructions

  1. Beat the butter, brown sugar and white sugar together in a medium bowl.
  2. If using the flour, mix it in completely and loosen the dip with milk a tablespoon at a time if needed.
  3. Add the vanilla and salt, taste, and adjust.
  4. Stir in the chocolate chips.
  5. Chill at least one hour before serving.
Notes: If you add flour it must be heat treated first: microwave 2 minutes or bake at 350 for 10 minutes, stirring once. I usually leave it out.

This dip tastes EXACTLY like cookie dough but you scoop it with graham crackers and pretzels and apple slices. Bring it to a barbecue and watch grown adults camp out next to it. The combination of sweet and salty here is so dangerous. Mix this up in the good Tupperware the morning of and it just sits in the fridge waiting on you.

It takes almost no effort and people always assume you fussed over it. Pretzels are the move if you want that salty sweet combo, but sliced apples keep it feeling a little more like a real dessert. Either way, bring extra scoopers because it disappears fast. We serve this with Nilla wafers, graham crackers, pretzels, and Nutter Butters, which sounds wrong and is absolutely right.

IngredientsCooking Instructions

Ingredients

  • 1 box chocolate cake mix, prepared per the box
  • 1 container fudge frosting
  • 1 cup semi sweet chocolate chips

Cooking Instructions

  1. Spray the inside of the crock pot with nonstick spray and pour in the prepared cake batter.
  2. Drop dollops of the fudge frosting all over the top of the batter, then sprinkle on the chocolate chips.
  3. Lay a paper towel over the top of the crock pot and set the lid on over it.
  4. Cook on high for 1 to 2 hours. At the one hour mark, test the middle with a toothpick and keep going until it comes out mostly clean.
  5. Turn the crock pot off, let the cake sit 10 minutes, and scoop it into bowls with ice cream.
Notes: Crock pots run at different temperatures. Start checking at one hour and every fifteen minutes after that so the edges do not scorch.

I’m counting this as no bake because nobody is turning on the oven. The slow cooker does the work, you scoop out warm gooey chocolate cake, top it with vanilla ice cream, and watch it all melt together. Showstopper dessert with zero stress. Set the slow cooker going right after dinner and it’s ready by the time the kitchen gets cleaned up.

It keeps warm on the low setting for a good while if everyone isn’t ready for dessert at the same time. Vanilla ice cream is the classic move, but a spoonful of peanut butter melted in on top takes this over the top. Leftovers reheat fine in the microwave with ten or fifteen seconds. This is one of my most popular crock pot desserts and my family’s favorite.

IngredientsCooking Instructions

Ingredients

  • 1 box yellow cake mix, 15.25 ounces
  • 2 cans apple pie filling, 21 ounces each
  • 1 stick butter, melted
  • 1/2 cup caramel sundae syrup

Cooking Instructions

  1. Spray the crock pot. Dump both cans of apple filling in and spread them into an even layer.
  2. Drizzle the caramel syrup over the apples.
  3. Stir the dry cake mix and the melted butter together until it looks like wet sand, then spread it over the apples.
  4. Lay a paper towel across the top of the crock pot, set the lid over it, and cook on high for 2 hours.
  5. For a crisper top, slide the insert under the broiler for 1 to 2 minutes, watching the whole time. Serve warm with ice cream or Cool Whip.
Notes: The paper towel catches the steam that drips off the lid. Skip it and the topping comes out pale and soggy.

You literally just dump everything in. That’s the whole recipe. It comes out tasting like warm apple pie with a buttery cake top, and the whole house smells incredible without you ever touching the oven. This is the one I make for church potlucks because it travels in the crockpot itself, still warm, and nobody has to dirty another dish.

Just plug it in when you get there and keep it on warm. Any pie filling works if apple isn’t in the pantry, so this is a great use it up recipe. Leftovers reheat great with a splash of milk stirred through. Easy recipes are my jam, and this one is about as easy as dessert gets.

Ingredients

  • 1 box yellow cake mix, prepared per the box
  • 15 ounce can pumpkin
  • 1 teaspoon nutmeg
  • 1 container whipped cream cheese frosting
  • Whipped cream for serving

Cooking Instructions

  1. Prepare the cake mix per the box directions.
  2. Stir in the pumpkin and nutmeg.
  3. Spray the crock pot and pour in the batter.
  4. Drop spoonfuls of the cream cheese frosting over the top and swirl a little, without pushing it to the bottom.
  5. Cook on high 1 hour 45 minutes to 2 hours, checking every 15 minutes after the first hour and a half.
  6. It is done when a knife in the center comes out mostly clean.
  7. Serve in bowls with whipped cream.
Notes: Check it every 15 minutes after 90 minutes. Every crock pot runs at a different heat and the edges go from done to burnt fast.

Pumpkin pie meets cake meets slow cooker. Top it with whipped cream and pretend you spent all day on it. (You did not.) Save this one for cooler nights when the pumpkin craving hits early.

This one is basically built for a busy weeknight since it just sits and cooks while you handle homework and dishes and everything else. A can of pumpkin in the pantry means you’re never far from making it. It holds up great as leftovers too, so don’t be afraid to make the full batch even for a smaller family. Our son adores anything pumpkin, so this cake shows up the first week the weather turns.

This is the list I send to friends who say they don’t bake, because a slow cooker doesn’t count in my book. It’s a good one to save for whenever you need a new idea in a hurry.

Ingredients

  • 1 French baguette, thinly sliced and toasted
  • 3 fresh peaches
  • 16 ounces ricotta cheese
  • 4 tablespoons honey
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Cooking Instructions

  1. Toast the baguette slices until golden.
  2. Halve, pit and slice the peaches.
  3. Spread ricotta over each slice of toast.
  4. Top with peach slices.
  5. Drizzle with honey and season with salt and pepper.
  6. Scatter the mint and basil over the top and serve right away.
Notes: Lay the bread in one layer on a sheet pan, brush with olive oil or melted butter, and bake or grill about 15 minutes to toast it.

Sweet peaches, creamy ricotta, a drizzle of honey, and toasted bread. Technically a snack, but I will absolutely eat it as dessert. So pretty, so summery, ten minutes flat. The kind of thing that makes you feel fancy on a regular Tuesday.

Toast the bread a little ahead of time and assemble right before serving so it stays crisp underneath. Frozen peaches thawed and drained work in a pinch when good ones aren’t in season. This one doesn’t really keep as leftovers, so just make what you’ll eat that day. Peaches scream summer and I am here for it.

IngredientsCooking Instructions

Ingredients

  • 20 ounces white almond bark
  • 4 ounces German chocolate baking bar
  • 12 ounce bag semisweet chocolate chips
  • 24 ounces dry roasted peanuts

Cooking Instructions

  1. Add the almond bark, German chocolate, chocolate chips and peanuts to the slow cooker in that order.
  2. Lay a paper towel over the crock and set the lid on top of it.
  3. Cook on low 1 hour without lifting the lid.
  4. Stir everything together.
  5. Replace the paper towel and lid and cook 15 minutes more.
  6. Drop spoonfuls onto parchment paper and let them set completely, 2 to 3 hours depending on the room.
Notes: The order the ingredients go in matters. Almond bark on the bottom, peanuts on top, or the chocolate on the bottom scorches.

Melt the chocolate in the slow cooker, stir in peanuts, drop little spoonfuls onto wax paper, let them set. That’s it. People will think you slaved over them and you absolutely did not. The salty sweet thing is undefeated.

These are my go to for holiday cookie trays and church potlucks because they set up fast and stack easily in the good Tupperware. Line the container with wax paper between layers so they don’t stick together. They freeze beautifully too, so make a double batch and pull them out whenever you need a treat on short notice. This is one of the most popular recipes I have ever posted, and I make it more than anything else on the site.

Ingredients

  • Bars: 2 cups sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups flour
  • 1 can pumpkin puree
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • Frosting: 8 ounces cream cheese, room temperature
  • 4 ounces butter, room temperature
  • 1 pound powdered sugar
  • 2 teaspoons vanilla

Cooking Instructions

  1. Heat the oven to 350 and spray a jelly roll pan.
  2. Mix all of the bar ingredients together until smooth.
  3. Pour into the pan and spread to the edges.
  4. Bake 20 to 25 minutes, until a toothpick in the middle comes out clean.
  5. Beat the cream cheese, butter, vanilla and powdered sugar until no lumps remain.
  6. Cool the bars at least an hour at room temperature, then frost.
Notes: The pan size matters. A jelly roll pan gives you thin bars with the right ratio of frosting. A 9×13 makes cake.

The bars need a quick bake, but the magic is the cool, creamy frosting on top. Make them once and they live in your dessert rotation forever. Especially good chilled, straight from the fridge. Frost these only once they’re fully cool, or that cream cheese frosting turns into a melty mess.

They cut cleaner the next day, so this is a genuine make ahead dessert if you have the patience to wait. They also freeze well without the frosting, so bake a batch ahead and frost the day you plan to serve them. Fall is for pumpkins, plaid, flannel and fire pits at our house, and these bars show up the first week the leaves turn. They are moist, which is the whole appeal.

IngredientsCooking Instructions

Ingredients

  • 1 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1 cup canned pumpkin
  • 1/4 cup oil
  • 1 teaspoon vanilla
  • Topping: 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups hot water

Cooking Instructions

  1. Heat the oven to 350 and spray a 9 inch square pan.
  2. Whisk the flour, baking powder, salt, sugar, cinnamon, cloves, ginger and nutmeg together.
  3. Add the pumpkin, oil and vanilla and stir with a spatula until blended, then spread into the pan.
  4. Mix the brown sugar and 1/2 teaspoon cinnamon and sprinkle evenly over the batter.
  5. Microwave the water until hot, about 1 1/2 to 2 minutes, and pour it over the top.
  6. Bake about 50 minutes. The cake rises to the top and a sauce forms underneath.
  7. Serve warm with vanilla ice cream and spoon the sauce over.
Notes: Do not stir after the water goes on. It looks wrong, and that is the point. The water sinks and becomes the sauce under the cake.

Dump cakes are basically my love language. Soft pumpkin, buttery cake topping, served warm or cold with a giant scoop of vanilla ice cream. Fair warning, you’ll want seconds. Maybe thirds.

Don’t fight it. This is a great one to make the day before a get together since it reheats fine in the microwave, covered, with a splash of water so it doesn’t dry out. Cold straight from the fridge is honestly just as good. Doubling this in a bigger dish works great if you’re feeding a crowd, just add a little extra time.

14. Pumpkin Dessert Recipes Roundup

Pumpkin Dessert Recipes

I’m sneaking this in for late summer, when pumpkin sneaks back. A whole roundup of cozy pumpkin desserts you can have ready when the cool nights start showing up again.

Bookmark for August.

Pumpkin desserts are one of those things that freeze better than people expect, so this list is worth saving even if fall feels far off right now. Stock a few cans of pumpkin in the pantry so you’re ready the second the craving hits.

It’s also a good one to keep handy for early fall potlucks when everyone else is still making the same three things.

Ingredients

  • 1 stick butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup vanilla ice cream
  • 6 to 12 frozen Rhodes cinnamon rolls
  • The icing packet from the rolls, kept in the fridge overnight

Cooking Instructions

  1. Melt the butter and ice cream together in a saucepan, stirring constantly.
  2. Add both sugars and bring to a rolling boil over medium high heat, whisking the whole time, for 2 to 3 minutes.
  3. Take it off the heat and let it cool 15 minutes, then refrigerate about an hour to thicken.
  4. Spray a glass baking dish and arrange the frozen rolls in it, six per 9×13.
  5. Pour the cold caramel over the rolls and put the dish in the cold oven overnight.
  6. In the morning leave the rolls in the oven while it preheats to 350, then bake 20 to 30 minutes total until browned on top.
  7. Pour the icing over the warm rolls.
Notes: I make extra icing with powdered sugar and milk, and I usually halve the recipe to six rolls, which bake about 25 minutes from a cold oven.

I know, technically these bake. But the shortcut in this recipe is so wild that they basically feel no bake compared to making the real thing. Gooey, caramelly, and the whole house smells incredible without much effort. Assemble the whole pan the night before and keep it covered in the fridge, then just bake it fresh the next morning.

That’s the trick for a lazy Sunday that still looks like you got up early to fuss. Leftovers reheat great in the microwave for a few seconds, and the caramel only gets gooier the second time around. These are a Christmas morning tradition and the number one request when the kids have friends sleep over. Bacon on the side and breakfast is done.

IngredientsCooking Instructions

Ingredients

  • 5 cups shredded rotisserie chicken
  • 2 cups chicken broth
  • 1 cup water
  • 1 packet buttermilk ranch dry seasoning
  • 3 cups penne pasta, uncooked
  • 1 1/2 cups mild cheddar cheese
  • 1 cup bacon pieces
  • 1 can cream of chicken soup
  • 8 ounces Velveeta, cubed

Cooking Instructions

  1. Pull the meat off a rotisserie chicken and shred it. You want about 5 cups.
  2. In a 4 quart crock pot, combine the chicken, cream of chicken soup, broth, water, ranch packet and Velveeta cubes. Cover and cook on high for 3 hours.
  3. Stir in the dry penne, push it under the liquid, and cover for 20 minutes.
  4. Stir well and cover for 10 more minutes, until the pasta is tender.
  5. Stir again, scatter the cheddar over the top and the bacon over the cheddar, and cover for 5 minutes until the cheese melts. Scoop into bowls.
Notes: Dry pasta goes in at the end only. Three hours in the sauce turns it to paste. Thirty minutes on high cooks it through.

Hear me out. Sometimes you want a no bake dinner before your no bake dessert. The slow cooker handles dinner so you don’t heat up the kitchen, and then you eat your eclair cake feeling like an absolute genius. Just thought I’d offer.

I throw the chicken in frozen most weeks and never think twice about it. It shreds easily right in the pot with two forks once it’s done. Stir the cooked pasta in at the very end so it doesn’t go mushy, and it doubles easily if you want leftovers for lunch the next day. Did you know you can make pasta in the slow cooker?

17. Easy Meals for Tired Moms (Pair with Dessert)

Easy Meals for Tired Moms

If you need easy dinners to go with your easy dessert, here you go. The whole roundup is a real lifesaver in summer when nobody, including me, wants to cook.

Keep this list saved on your phone for the nights the kids are yelling and dinner still isn’t figured out. Most of these come together with pantry staples you probably already have.

Pair one with tonight’s no bake pick and you’ve got a whole meal handled without touching the oven once.

18. 20 Comfort Food Dinners (To Pair with Sweet Endings)

20 Comfort Food Dinners

Round out your no bake dessert with one of these cozy dinners. The kind of meal that pairs beautifully with a slice of eclair cake or a giant spoonful of cookie dough at the end of the night.

This is my go to list for hotdish energy on nights when dessert is really the main event and dinner just needs to show up. Most of these reheat well too, so cook once and eat twice.

Save it alongside your dessert list so the whole menu is planned before anyone even asks what’s for dinner.

Can I make these ahead for a party?

Most of these actually taste better made a day ahead, especially the poke cake and the eclair cake. Chilling gives the layers time to soften and set properly.

Do any of these freeze well?

The peanut clusters, edible cookie dough, and cookie dough pie all freeze great. Just wrap tight and thaw in the fridge before serving.

Can I double a recipe for a bigger crowd?

Yes, most of these double easily in a bigger dish or a second pan. Just give crockpot recipes a little extra time if you fill the pot fuller.

What if my kids are picky about texture?

Stick with the dump cakes and lava cake since they’re warm, soft, and familiar tasting. The no bake pie and dip recipes are easy to load with mix ins kids already like.

Can I swap ingredients based on what’s in my pantry?

Absolutely, things like pie filling flavors or gelatin flavors are easy swaps. Stick to the same amounts called for and you’ll be fine.

Save this list for the next time the kitchen hits 85 degrees and someone in the house asks for dessert. Future you, scooping cookie dough pie at sunset on the porch, is going to thank you. 💛
