Three things that make this quiche work
The oven does most of the thinking here, and these are the three places it goes right or wrong.
- Soften the onion in the microwave: 60 seconds with the butter, right in the bowl, no extra pan.
- Two-stage bake: 15 minutes at 425, then down to 350 until a knife comes out clean in the center.
- Let it rest ten minutes: Slices come out clean instead of slumping off the spatula.

This is the best quiche I’ve ever had in my entire life. Bold statement, I know … but true.
This one does not make you choose between ham and bacon, because both go in. Add creamy mozzarella and a custard of eggs and half and half, and it is a full breakfast in one pie dish.
Easy Breakfast Quiche
I have fond memories of quiche. My mom wasn’t ever an aspiring chef by any stretch of the imagination.
Not by any fault of her own per sé. She just worked up to four jobs at a time and really didn’t have time to cook from scratch.
But, whenever she “splurged” she’d buy the little mini quiche cups from Sam’s Club and I loved them. They were my favorite.
So very good.
And, I’m happy to report that this recipe for breakfast quiche is the full version of those little cups and absolutely fantastic.

Why this quiche works:
The bake happens in two stages, hot then gentle. Fifteen minutes at 425 gets the crust going, then the oven drops to 350 so the custard cooks through without curdling.
Mozzarella is a quieter cheese than the fancy ones quiche recipes usually call for, and that is the point. It melts creamy and lets the ham and bacon do the talking.
Breakfast Egg Quiche Ingredients:
- Pie Crust
- 1/2 small onion, chopped and diced
- 1 T butter
- 6 slices bacon cooked and crumbled
- 1 cup diced ham
- 2 cups shredded mozzarella, freshly shredded or prepackaged
- 4 eggs
- 1 1/2 cups half and half
- 1/4 tsp dry mustard
- 1/2 tsp salt
How to Make Breakfast Quiche:
Preheat oven to 425
In a bowl microwave onion and butter for 60 seconds
Follow directions on pie crust to unroll crust and place in a pie dish
Place melted butter and onion mix in pie dish
Place half of ham, half of bacon and half of cheese in pie dish
Place remaining ham, remaining bacon and remaining cheese in pie dish
Mix well: eggs, half and half and seasonings in bowl
Pour over meat and cheese mixture
Bake in preheated oven for 15 minutes
Turn oven down to 350 and cook for 35-40 minutes & until knife comes out clean in the center
Let sit for ten minutes
Slice and enjoy!
What I’ve learned making this:
The 60 seconds in the microwave with the butter is all the onion needs. It softens right in the bowl, and you skip dirtying a pan before 8 am.
Trust the knife test over the clock. When a knife comes out clean from the center, it is done, whether that lands at 35 minutes or 40.
The ten minute rest is not optional. Cut it hot and the slices slump, wait ten minutes and they come out clean and proud.
Can this quiche be made ahead?
Yes, and that is half the reason I love it. Assemble it the night before, and in the morning the only job left is turning on the oven.
This is the full-size version of the quiche I loved as a kid, made in one pie dish on an ordinary morning. My mom would love this one, and that is the highest bar I have.
