Sausage Breakfast Casserole

This sausage breakfast casserole is absolutely delicious and so so easy. You’ll love that it’s a make ahead breakfast recipe so you assemble it the night before and allow the flavors to come together overnight and pop it in the oven in the morning.

A hearty breakfast that takes no time in the morning while you enjoy your coffee.

Overnight Breakfast Sausage Casserole with Bread

When I look to make a new breakfast casserole, for some reason I always reach for the sausage. And, I must admit, the carbs, too. This is a good easy sausage breakfast casserole with bread as the main filler – accompanied by the usual suspects, including eggs, milk and cheese.

Maybe the best part? It’s an overnight casserole with bread where the eggs and milk have a chance to soak into the casserole really well over night. Delicious!

Can Sausage Breakfast Casserole be Frozen?

This isn’t a great breakfast casserole to freeze (sorry!). But, it’s about as easy as it comes since it can be made the night before. However, one time saving tip would be to cook and crumble the sausage the night before. Drain and freeze the sausage and put it in a quart size freezer bag and store it in the fridge for up to a couple days before using, or put it in the freezer. Either will do the trick and will save you about ten minutes.

Is This a Good Breakfast Casserole for the Week?

This is a fabulous breakfast casserole for the week. If you need easy dinner ideas, this is a fabulous casserole to whip up as you’ll be able to let it sit all day, and then pop it in the oven when you get home rom work, serve with fruit and you’ve got a complete meal!

Is this a Breakfast Casserole That Can Be Made the Night Before?

Sure is! In fact, that’s even in the instructions! You’re going to want to let this casserole sit overnight to let the flavors come together.

Here’s how I whip this easy sausage casserole up.

Gather the ingredients. The best part? These are ingredients that you likely already hav sitting around the house. Gotta love that!

1 pound sausage browned and drained
6 eggs
2 cups milk
8 slices bread, buttered
1 tsp. dry mustard
1 tsp. salt
1 cup grated cheddar cheese

How Do You Make This Egg Sausage Breakfast Casserole?

Press buttered bread, buttter side down in 9×13 dish
Mix together eggs, mustard, milk and salt
Mix in cheese and sausage
Pour over bread slices
Refrigerate 8 hours or overnight
Bake uncovered at 350 degrees for 40-45 minutes
