It’s a breakfast sausage quiche casserole that came together in a matter of minutes (less than ten minutes, in fact) and it is delicious!

You know when you make a recipe and immediately fall in love with the flavor, and then everyone else in your family does too?
It sure doesn’t always happen, but when it does … by golly, I know I need to get that recipe up on here fast as I don’t want to forget any of the ingredients or what we did to make it so delicious!
This breakfast quiche recipe is one of those times – every single person in my family loved it, and our daughter even bragged to her friend, and then asked me if she and her friend could have that for dinner at our house that night.
I always do pizza when the kids have friends over – so to get a request for this crustless quiche casserole for breakfast for dinner over our tried and true pizza …. watch out! We have a winner here!
As I mentioned, this crustless breakfast quiche recipe is simple, comes together in minutes and bakes in a short 30 minutes.
It fills the entire family with protein from the eggs and sausage to fill them up for the morning and gets us on our way quick – you’ve got to love that!
Can quiche be eaten for breakfast?
Quiche is the perfect breakfast, as it contains eggs, cream, a protein, usually either ham, bacon or sausage like in this breakfast egg quiche, but yes! To answer the question of it quiche can be eaten for breakfast, absolutely!

I like to serve quiche with fruit and cinnamon rolls, but if I’m in a pinch for time, or only have the ingredients for the quiche on hand, it makes a fine meal in itself.

Quiches have a lot of protein in them which make them very hearty and filling. The heavy whipping cream of course is best in moderation, however, it’s great on occasion!

We call a quiche without a crust a crustless quiche – it’s easy as that!
Here is how I make this easy breakfast quiche recipe:
Sausage Breakfast Quiche
Ingredients
- 16 oz. pork breakfast sausage
- 1 tsp onion powder
- 1 cup cheddar cheese
- 6 eggs
- 1 cup heavy whipping cream
- 1/4 tsp salt
- 1/8 tsp pepper
Instructions
- In a skillet, cook, combine & crumble breakfast sausage and onion powder
- In a separate large bowl crack eggs & whip well
- Stir heavy whipping cream into eggs
- Add cheese to egg & whipping cream mixture
- Add sausage to the cream & egg mixture
- Pour into a sprayed 2-Quart casserole dish, distributing mixture evenly over the bottom of the dish
- Bake at 375 degrees for 30 minutes, and an inserted toothpick comes out clean
