There is a specific kind of joy that comes from pulling a bubbling, golden, cheesy casserole out of the oven. The cheese is doing that thing where it’s stretching when you scoop.

The edges are crispy. Everyone gets quiet because they smell it.

You feel like a dinner hero, and you barely had to try.

Casseroles are basically the reason I keep going as a mom cook. They feed a crowd, they reheat beautifully, you can make them ahead.

Many of them freeze beautifully, either before or after baking, as long as they’re wrapped tight. The exceptions are ones with a crunchy topping like the Dorito Casserole, which are best enjoyed fresh.
