Easy Meals for Tired Moms

When the weekend’s been too long and you’re just starting the work week, it’s time to find some easy meals that will come together quickly.

Picture of one of my favorite Easy Meals that come together quickly

In this article we are talking about what kind of dinners make the best easy meals for tired moms, and then – I’m giving an entire list of our favorite easy dinners that make nights easier around the house.

  1. One-pot meals: One-pot meals are great for busy moms because they’re easy to prepare and require minimal cleanup. Examples include soups, stews, and casseroles.
  2. Slow cooker meals: Slow cookers are a great tool for busy moms because you can prep the ingredients in the morning and have a delicious meal ready by dinnertime. Some easy crockpot meals include chili, pulled pork, and chicken tacos.
  3. Breakfast Casseroles: Breakfast casseroles are a great option because they require minimal prep and cleanup. Simply toss your eggs with the ingredients that you have on hand and you’re ready! Try bell pepper with potatoes and green chilies or salmon with asparagus and cherry tomatoes – and then when you lay these mixtures into a tortilla, you have a whole other spin on taste and flavor. Anything goes when it comes to breakfast!
  4. Meal prep: Consider doing some meal prep on the weekends to make your weeknights easier. Cook a big batch of rice or quinoa, roast some veggies, and grill some chicken or fish. Then you can mix and match to create different meals throughout the week.
  5. Quick and easy stir-fries or fried rice dishes: Stir-fries are quick and easy to prepare and can be made with a variety of ingredients. Try a vegetable stir-fry with your favorite veggies and a simple sauce made with soy sauce, garlic, and ginger.

Remember, there’s no shame in taking shortcuts like pre-chopped vegetables or rotisserie chicken. The most important thing is to take care of yourself and your family, even when life gets busy.

Easy One-Pot Dinners:

Trying out new easy dinner ideas is a great way to add some variety to your meal rotation without sacrificing time or effort.

Not only can it keep mealtime exciting for you and your family, but it can also expose you to new ingredients and flavors that you may not have tried before.

Whether it’s a simple pasta dish with fresh herbs and vegetables or a homemade pizza with your favorite toppings, there are plenty of delicious and easy dinner ideas out there that you can add to your rotation.

Plus, when you have a few go-to easy dinner recipes in your arsenal, you can save time and stress by not having to think too hard about what to make each night.

Some of my favorite easy dinners include:

Pasta Bake with Tortellini
Dorito Chicken Casserole
Easy Baked Goulash
Chicken Spaghetti

Simple Crock Pot Meals:

I LOVE my Crock Pots!

Crock Pot Meals are a Godsend for busy moms who want to put together a delicious, hearty meal without having to spend too much time and energy in the kitchen.

One of the best things about slow cooker meals is that you can prep the ingredients ahead of time and then just set it, or dump it, or whatnot and forget it.

This means you can go about your day, whether it be running errands or working from home, without having to worry about what’s for dinner.

Slow cooker meals are also great for making large batches, which means you can have leftovers for lunch or dinner the next day. From soups and stews to fillings for sandwiches, casseroles and tender beef roasts, there are endless possibilities for Crock Pot meals. I also love that you can use sausage, fish, beef or chicken and everything comes together so nice!

If you’re looking for an easy way to get a delicious meal on the table without all the hassle after a long day, and spend more time with the kids and family, consider making a Crock Pot meal tonight – and here are my personal favorites:

Ravioli Lasagna
Hearty Beef, Barley and Vegetable Stew
Crock Pot French Dip Sandwiches
Crock Pot Fettuccine Chicken Alfredo

Breakfast for Dinner:

Breakfast foods like eggs, pancakes, and waffles are quick and simple to whip up, which makes them perfect for a busy weeknight. You can also get creative and mix and match ingredients to create different meals, like a veggie omelette with some toast and fruit, or some pancakes with bacon and eggs with melted cheese on the side.

Plus, breakfast for dinner is a fun way to change things up and make mealtime feel a bit more relaxed, using the oven can do that, too.

Here are some of my go-to breakfast casseroles that I like to make for dinner!

Sausage Breakfast Quiche
Bisquick Breakfast Casserole
Easy Breakfast Egg Quiche
Breakfast Casserole with Bacon and Hashbrowns
Bubble Up Sausage Breakfast Casserole
