18 No-Bake Desserts Nobody Can Resist

The first really hot day of the year, I always have the same internal moment. Someone wants dessert.

The kitchen is already 84 degrees. The thought of turning on the oven feels like a personal attack.

So what’s a person to do? Make something amazing without ever heating up the house, that’s what.

I have spent years collecting the no bake desserts that actually deliver, the ones that taste like real, decadent, made from scratch desserts even though you, you know, didn’t bake anything.

Here are 18 no bake desserts nobody can resist, perfect for those long summer days when the oven is officially canceled.

1. No Bake Eclair Cake

No-Bake Eclair Cake

The first time I made this I was so suspicious. Graham crackers and pudding turning into actual cake overnight?

But I’m telling you, it works. Layers of creamy vanilla, rich chocolate, and graham crackers that magically become soft cake.

Pure summer dessert magic. Click here for the full recipe →

This one actually gets better the longer it sits, so make it the night before if you can. A full 24 hours in the fridge is when those graham crackers turn into that soft, cake like texture everyone loves.

It also travels great for potlucks since it’s already cold and ready to go. Just cover the pan tight and it’ll hold in the fridge for several days without going soggy on you.

2. Cookie Dough Pie

Cookie Dough Pie

Edible cookie dough piled into a buttery crust. There’s no oven involved and there’s no shame either.

It’s basically pure celebration in pie form, and I challenge you to take just one bite. You can’t.

Nobody can. Click here for the full recipe →

A store bought graham crust works perfectly here if you’re short on time, and honestly I use one most weeks. Nobody at the table has ever complained.

This slices cleaner if you pop it in the freezer for twenty minutes right before serving. It also freezes well whole, so you can make it ahead for a birthday and just thaw it in the fridge overnight.

3. Strawberry Poke Cake

Strawberry Poke Cake

The cake itself is a quick bake, but the magic happens cold. You poke holes, soak it with strawberry, top with whipped cream, and chill.

It’s so pretty and pink and tastes exactly like summer feels. Goes with iced coffee on the porch.

Bake the cake the night before so all you have to do the day of is poke, soak, and top. It genuinely tastes better after a full day in the fridge, so this is a real make ahead dessert for cookouts.

Swap in a different flavor of gelatin if strawberry isn’t your family’s favorite. Cherry and raspberry both work great and nobody will know you switched it up.

4. Edible Cookie Dough

Edible Cookie Dough

Sometimes I just want a bowl of cookie dough and a spoon. Don’t make it weird, you know exactly what I mean.

This is safe to eat cookie dough, no eggs, no flour, just pure soft brown sugar bliss.

Click here for the full recipe →

Keep a tub of this in the deep freezer and scoop it straight out when the craving hits. It softens up fast on the counter so you don’t even need to wait long.

Roll it into little balls and freeze them flat on a tray, then bag them up for a grab and go treat the kids can help themselves to.

5. Chocolate Chip Dip

Chocolate Chip Dip

This dip tastes EXACTLY like cookie dough but you scoop it with graham crackers and pretzels and apple slices. Bring it to a barbecue and watch grown adults camp out next to it.

The combination of sweet and salty here is so dangerous. Click here for the full recipe →

Mix this up in the good Tupperware the morning of and it just sits in the fridge waiting on you. It takes almost no effort and people always assume you fussed over it.

Pretzels are the move if you want that salty sweet combo, but sliced apples keep it feeling a little more like a real dessert. Either way, bring extra scoopers because it disappears fast.

6. Crockpot Lava Cake

Crockpot Lava Cake

I’m counting this as no bake because nobody is turning on the oven. The slow cooker does the work, you scoop out warm gooey chocolate cake, top it with vanilla ice cream, and watch it all melt together.

Showstopper dessert with zero stress. Click here for the full recipe →

Set the slow cooker going right after dinner and it’s ready by the time the kitchen gets cleaned up. It keeps warm on the low setting for a good while if everyone isn’t ready for dessert at the same time.

Vanilla ice cream is the classic move, but a spoonful of peanut butter melted in on top takes this over the top. Leftovers reheat fine in the microwave with ten or fifteen seconds.

7. Crockpot Apple Dump Cake

Crockpot Apple Dump Cake

You literally just dump everything in. That’s the whole recipe.

It comes out tasting like warm apple pie with a buttery cake top, and the whole house smells incredible without you ever touching the oven.

Click here for the full recipe →

This is the one I make for church potlucks because it travels in the crockpot itself, still warm, and nobody has to dirty another dish. Just plug it in when you get there and keep it on warm.

Any pie filling works if apple isn’t in the pantry, so this is a great use it up recipe. Leftovers reheat great with a splash of milk stirred through.

8. Slow Cooker Pumpkin Dump Cake

Slow Cooker Pumpkin Dump Cake

Pumpkin pie meets cake meets slow cooker. Top it with whipped cream and pretend you spent all day on it.

(You did not.) Save this one for cooler nights when the pumpkin craving hits early.

Click here for the full recipe →

This one is basically built for a busy weeknight since it just sits and cooks while you handle homework and dishes and everything else. A can of pumpkin in the pantry means you’re never far from making it.

It holds up great as leftovers too, so don’t be afraid to make the full batch even for a smaller family.

9. The Best Slow Cooker Desserts Roundup

Slow Cooker Desserts Roundup

If you needed even MORE no oven dessert ideas, this whole roundup is full of them. Cherry dump cakes, fudgy things, all kinds of sweet little crockpot wonders.

Bookmark this for the deep summer heat. Click here for the full recipe →

This is the list I send to friends who say they don’t bake, because a slow cooker doesn’t count in my book. It’s a good one to save for whenever you need a new idea in a hurry.

Most of these use pantry staples, so it’s an easy place to start if you’re trying to use up what’s already in the cupboard.

10. Peach Bruschetta with Ricotta

Peach Bruschetta with Ricotta

Sweet peaches, creamy ricotta, a drizzle of honey, and toasted bread. Technically a snack, but I will absolutely eat it as dessert.

So pretty, so summery, ten minutes flat. The kind of thing that makes you feel fancy on a regular Tuesday.

Click here for the full recipe →

Toast the bread a little ahead of time and assemble right before serving so it stays crisp underneath. Frozen peaches thawed and drained work in a pinch when good ones aren’t in season.

This one doesn’t really keep as leftovers, so just make what you’ll eat that day.

11. Crock Pot Peanut Clusters

Crock Pot Peanut Clusters

Melt the chocolate in the slow cooker, stir in peanuts, drop little spoonfuls onto wax paper, let them set. That’s it.

People will think you slaved over them and you absolutely did not. The salty sweet thing is undefeated.

Click here for the full recipe →

These are my go to for holiday cookie trays and church potlucks because they set up fast and stack easily in the good Tupperware. Line the container with wax paper between layers so they don’t stick together.

They freeze beautifully too, so make a double batch and pull them out whenever you need a treat on short notice.

12. Pumpkin Bars with Cream Cheese Frosting

Pumpkin Bars with Cream Cheese Frosting

The bars need a quick bake, but the magic is the cool, creamy frosting on top. Make them once and they live in your dessert rotation forever.

Especially good chilled, straight from the fridge. Click here for the full recipe →

Frost these only once they’re fully cool, or that cream cheese frosting turns into a melty mess. They cut cleaner the next day, so this is a genuine make ahead dessert if you have the patience to wait.

They also freeze well without the frosting, so bake a batch ahead and frost the day you plan to serve them.

13. Pumpkin Dump Cake

Pumpkin Dump Cake

Dump cakes are basically my love language. Soft pumpkin, buttery cake topping, served warm or cold with a giant scoop of vanilla ice cream.

Fair warning, you’ll want seconds. Maybe thirds.

Don’t fight it. Click here for the full recipe →

This is a great one to make the day before a get together since it reheats fine in the microwave, covered, with a splash of water so it doesn’t dry out. Cold straight from the fridge is honestly just as good.

Doubling this in a bigger dish works great if you’re feeding a crowd, just add a little extra time.

14. Pumpkin Dessert Recipes Roundup

Pumpkin Dessert Recipes

I’m sneaking this in for late summer, when pumpkin sneaks back. A whole roundup of cozy pumpkin desserts you can have ready when the cool nights start showing up again.

Bookmark for August. Click here for the full recipe →

Pumpkin desserts are one of those things that freeze better than people expect, so this list is worth saving even if fall feels far off right now. Stock a few cans of pumpkin in the pantry so you’re ready the second the craving hits.

It’s also a good one to keep handy for early fall potlucks when everyone else is still making the same three things.

15. Cinnamon Caramel Rolls (with a No Yeast Shortcut)

Cinnamon Caramel Rolls

I know, technically these bake. But the shortcut in this recipe is so wild that they basically feel no bake compared to making the real thing.

Gooey, caramelly, and the whole house smells incredible without much effort. Click here for the full recipe →

Assemble the whole pan the night before and keep it covered in the fridge, then just bake it fresh the next morning. That’s the trick for a lazy Sunday that still looks like you got up early to fuss.

Leftovers reheat great in the microwave for a few seconds, and the caramel only gets gooier the second time around.

16. Bonus: A Cozy Dinner First (Crockpot Crack Chicken Pasta)

Crockpot Crack Chicken Pasta

Hear me out. Sometimes you want a no bake dinner before your no bake dessert.

The slow cooker handles dinner so you don’t heat up the kitchen, and then you eat your eclair cake feeling like an absolute genius.

Just thought I’d offer. Click here for the full recipe →

I throw the chicken in frozen most weeks and never think twice about it. It shreds easily right in the pot with two forks once it’s done.

Stir the cooked pasta in at the very end so it doesn’t go mushy, and it doubles easily if you want leftovers for lunch the next day.

17. Easy Meals for Tired Moms (Pair with Dessert)

Easy Meals for Tired Moms

If you need easy dinners to go with your easy dessert, here you go. The whole roundup is a real lifesaver in summer when nobody, including me, wants to cook.

Click here for the full recipe →

Keep this list saved on your phone for the nights the kids are yelling and dinner still isn’t figured out. Most of these come together with pantry staples you probably already have.

Pair one with tonight’s no bake pick and you’ve got a whole meal handled without touching the oven once.

18. 20 Comfort Food Dinners (To Pair with Sweet Endings)

20 Comfort Food Dinners

Round out your no bake dessert with one of these cozy dinners. The kind of meal that pairs beautifully with a slice of eclair cake or a giant spoonful of cookie dough at the end of the night.

Click here for the full recipe →

This is my go to list for hotdish energy on nights when dessert is really the main event and dinner just needs to show up. Most of these reheat well too, so cook once and eat twice.

Save it alongside your dessert list so the whole menu is planned before anyone even asks what’s for dinner.

Questions I Get About These Desserts

Can I make these ahead for a party?

Most of these actually taste better made a day ahead, especially the poke cake and the eclair cake. Chilling gives the layers time to soften and set properly.

Do any of these freeze well?

The peanut clusters, edible cookie dough, and cookie dough pie all freeze great. Just wrap tight and thaw in the fridge before serving.

Can I double a recipe for a bigger crowd?

Yes, most of these double easily in a bigger dish or a second pan. Just give crockpot recipes a little extra time if you fill the pot fuller.

What if my kids are picky about texture?

Stick with the dump cakes and lava cake since they’re warm, soft, and familiar tasting. The no bake pie and dip recipes are easy to load with mix ins kids already like.

Can I swap ingredients based on what’s in my pantry?

Absolutely, things like pie filling flavors or gelatin flavors are easy swaps. Stick to the same amounts called for and you’ll be fine.

Save this list for the next time the kitchen hits 85 degrees and someone in the house asks for dessert. Future you, scooping cookie dough pie at sunset on the porch, is going to thank you. 💛
